Cajun Chicken Pasta

I cooked this for a weekly supper club & it was fabulous. The only things I changed were that I baked the chicken in a butter/Tony Chachere's marinade instead of cooking it on the skillet (it comes out juicier) and I used Half N' Half (thickened with a little flour) instead of the heavy cream. I also went with fresh lemon instead of lemon pepper. This was awesome & everyone went back for seconds. I used bowtie pasta to pick up the sauce better. Yum :) I will definately be making this one again.

To Die For Blueberry Muffins

I converted this recipe to make 36 muffins to bring to work. Everyone raved about them & they came out delicious!! Originally, the batter was a little too thick so I did add probably another 1/4 - 1/3 cup of milk. The topping works best if you use real butter & if it is a little soft (not fresh out of the fridge. I kneaded it with my hands instead of with a fork to make sure the butter broke apart. Awesome!

Strawberry Cake I

I read other reviews about the sweetness of this cake, so I used 1/3 box of jello mix instead of the whole box. Also, I pureed a whole container of strawberries to mix into the batter. Also, I used fresh strawberries instead of frozen. I used a buttercake mix and included a stick of butter in the batter (not the healthiest...but it was for Valentine's day...it's a special occasion!!) I used a buttercream icing (storebought) and put fresh raspberries and strawberries on top. It came out beautifully & the cake was soft, moist, and not too sweet. You could really taste the real strawberries in the mix. Overall, this is a great cake for something a little out of the ordinary!

Slow Cooker Chicken Creole

EXACTLY what I was looking for. I took the advice of some of the other reviews and I added Tony's for seasoning, about a cup or so of chicken broth, as well as a can of tomato paste. I also added some garlic powder and 3 dried bay leaves. I served it over white rice. The flavor is amazing and it re-heats well which is important because who wants to eat bad leftovers?!
