Cherry Tomatoes Filled with Goat Cheese

I've made it twice now. My bridge group just loves it! The cherry tomatoes I used were so large that I just cut them in half. It was much easier to remove the seeds that way too. Both times I varied the recipe by using 1/4 cup feta cheese, 1/4 cup sour cream and 1/4 cup of my home made pesto. Just mixed it altogether and spooned it into the tomato halves. Lots of great flavor and I love these little appetizers too!

Sopapilla Cheesecake Dessert

I made this recipe with "multigrain" crescent rolls which I had bought by mistake. I don't think it made any difference to the taste but maybe a wee bit healthier. I also added fresh cut up peaches, mango and apricots before adding the last layer of crescent roll. I think that made it better and would add even more fruit next time. I found the filling to be a little gooey and am trying to think of a way to make it more like the firmness of regular cheesecake. I'm thinking of adding eggs next time and par cooking it before adding it to the pan. Input from anyone else out there would be appreciated. It go rave review from all who ate it, including my husband who doesn't like cheesecake (finds it too rich) so I will definitely be making it again.

Pork Tenderloin with Dijon Marsala Sauce

I've made this many times - exactly as the recipe indicates. It is guest quality so I save it for when I am entertaining and serve it with roasted potatoes and a medley of stir fried, colourful vegetables.

Peanut Butter Vegetable Chicken Soup

I make all kinds of soup all winter but this is definitely one of the best!! My husband (who complains when I sometimes make heartier soups for dinner) loved this one - even for dinner.

Ham Chowder

A lot of work chopping but a very good recipe. A full meal when served with garlic/parmesan bread or pita bread and hummus. I only used about 1/2 lb of bacon and that was plenty. I chopped the carrots very finely and mashed the potatoes. I don't like big chunks of potatoes in a soup. The mashed potatoes made it even creamier which was great.

Country Quiche

I made this for my husband, sister and brother-in-law. They all liked it but I didn't think it was creamy enough. I'm going to delete this one and try to find another with more cream or cheese.

Harvest Salad

Delicious and loved wherever I bring it. I don't like walnuts but pecans (especially if you want to candy them), pine nuts or toasted almonds work well. Green onions are also good if you don't have a red one on hand. I only use half the dressing because I don't like too much and use the other half next salad (or make 1/2 recipe).

Curried Coconut Chicken

Delicious! I followed the recipe exactly then added cauliflower because I like vegetables but didn't think a salad would go with this. I served it over brown rice. I'll make soup with the leftovers - lots of sauce.

Indian Pork Chops

I added chopped onions at the beginning of the simmer and green pepper (red pepper would be just as good or better) 3 minutes before the end. Next time I make it,I'll add a bit more nectar and a lot more curry. Maybe then It'll be a 5 star - I'll let you know.

Thai Shrimp and Noodles

My husband and I agree - a real keeper. Made it mostly as shown with 2 exceptions: I used Kraft Asian Sesame dressing and marinade instead of Italian salad dressing and I added about 1-1/2 cup green beans. Delicious!

Absolutely delicious!! A very filling meal with baguette and cheese. I used 4 skinless chicken thighs and put them in the pot whole because I like the flavor the bones give. I removed the meat from the bones and put it back in the pot after cooked. I used brown rice instead of white and 14% sour cream instead of heavy cream.

Chicken with Cranberries

Delicious - good and colourful enough for a dinner party. I didn't have any fresh cranberries so I used my left over home made cranberry sauce and eliminated the water and sugar as well as the fresh cranberries. I will definitely make this again - maybe for company next time.

Vegetable Trio

Just found this on allrecipes.com while looking for "Chinese" veggie dishes. I've been making this recipe for years and it is a family favorite. I fry on high for about 10 minutes. This cooks and browns the vegetables to just the right firmness - I hate soggy veggies.
