Lebanese-Style Red Lentil Soup

Wow this was so simple but so good! I added the lemon to taste and ended up adding just over 1/4 cup. I did use the immersion blender but you could certainly get away w/out it if you diced the onion small enough.

Tuna Piccata Pasta Salad

So good. So simple and fast. No changes recommended. I think that quality ingredients (i.e. tuna, pasta, oil) really make it.

Crustless Cranberry Pie

Wonderful! Used almonds instead which worked great. Went half and half with almond/vanilla extract and it was still slightly too almondy for our tastes. Great texture and moistness. No need for whipped cream or ice cream in my opinion:) I will make this again and again!

Garlic Prime Rib

Wonderful for my fist attempt at prime rib. Used a smaller roast so shortened the times a little but mostly relied on an instant read digital thermometer. YUM.

Spicy Pumpkin Soup

How simple and healthy!! Delicious. I used more cajun seasoning and less cream (it tasted great even before the cream but it definitely added a nice texture). Ran the immersion blender through it after it cooled a little and then heated it back up. It was just enough for the boyfriend and I as the main entree, so I'll probably make a double batch next time because I am wishing I had leftovers today! Paired with fresh rolls and a crisp pinot grigio.
