Good Old Fashioned Pancakes

YUM! I would have given this 5 stars, but I tweaked the recipe per other people's comments. I cut the salt to 1/2 a teaspoon and added 1 teaspoon of vanilla. It was PERFECT. We were all fighting for the last pancakes. One batch makes approximately 10 medium-sized cakes.

Gnocchi I

Really liked this as a base. Like many other people mentioned, I would recommend cutting down that flour. I used 2 potatoes, and they were big... so I just added more of the potato to my mixture. Also, make sure to mash those taters up good! I used a potato masher, but should have mashed it more. I ended up with chunks of potato in my dough. Will definitely make this again. I think next time I will make sure to mash up the potatoes more and use 1-1.5 cups of flour per cup of mashed potato. I'm also going to add some spices and maybe parmesan into the dough next time. :)

Frozen Strawberry Yogurt

I thought this was very tasty! I agree with the others that it gets a bit icy, but it was delicious. I think next time, I will use low-fat yogurt instead of fat-free.

Apple Strudel Muffins

I thought these were ok. I did replace the butter in the batter with oil. They weren't very sweet and were a little dense. Don't get crazy; we ate them and did like them! However, I don't think I will make them again.

Best Big, Fat, Chewy Chocolate Chip Cookie

These were very yummy! I followed the recipe to a tee... may have made the cookies a little smaller though. I definitely got more than 18. They were great and were a big hit with my family. After 2 days, they got a little hard, but were still tasty. :)

Banana Crumb Muffins

Per other reviewers, I replaced the butter with 1/3 cup of canola oil. Other than that, I followed the recipe as is... cooked them for exactly 20 minutes. These were AWESOME. They are bakery quality. I will be making these again and again.

Zucchini-Chocolate Chip Muffins

Thought these were really yummy! I used regular size chocolate chips (1/2 cup) and cut the walnuts (preference). As listed, it made 15 regular sized cupcakes, which took about 17-18 minutes to cook. I will definitely make them again, but I think I will double the recipe and make in a jumbo muffin pan!

Stephanie's Freezer Spaghetti Sauce

I did like this recipe. It's a great way to use up tomatoes. I used varying types tomatoes... and made half the recommended batch. I did use fresh basil and eliminated the green pepper. I let the sauce cook as recommended, cooled it, and let it sit in the fridge overnight. The next day, I pureed part of it and mixed it all together. It's a little thinner than I would like, but delicious... my husband and son ate it right up too! Will make again (assuming I am lucky enough to have that many tomatoes!).

Very easy to make. I used low-fat mayo and fresh basil and followed the recipe exactly. This was also my 4-year-old's first exposure to fish... he ate a TON of it!!

Shrimp with Tomatoes and Feta Cheese

Delicious, with a nice kick to it. If you don't like spice, you won't like this... we loved it. I tried to "lighten" it up a little bit... I cut the oil in step 1 to 1 tablespoon and used low-fat feta. I also only used 1 pound of shrimp, which was plenty. It was super yummy. Served it over farfalle. Will definitely make this again.

Blueberry Zucchini Bread

SO delicious. I cut the recipe in half and made one loaf out of it. I used a normal-sized loaf pan. It popped nicely, but did take over an hour to cook. I was worried about the cooking time, but it was unbelievably moist and bursting with blueberries. My husband seemed freaked out about having zucchini in there. We were fighting over the pieces!!

Bread Machine Pizza Dough

This was excellent!! I was worried... my dough was sticky and not easy to work with. I was hoping to put it right on the pizza stone. However, that wasn't going to happen, so I put it into a large cookie sheet. YUM! I cooked it for about 7 minutes, pulled it out and put on olive oil and my toppings. Then, I cooked another 17 minutes. It came out perfect. p.s. I used Molson Canadian.
