Black Bean and Corn Salad II

Pretty good. Next time will try with red onion and halve the amount of onion. Also, I would use real limes and mix it with some lemon, and serve it over rice. I added a little hot sauce to mine because I like that vinegar taste, and this came out pretty good.

Quick Poached Salmon with Dill Mustard Sauce

Generally, I'm not a fan of dill. This was okay to me, but prob won't make again. Good starter recipe for someone whose never cooked salmon before and is grill-less.

Flatlander Chili

Awesome chili! Be prepared though.. it really does make a lot. After I started adding the ingredients, I got nervous that it might not all fit in my pot. Gladly, it did, and now I have chili for a week. Like others, I added 1/4 cup of corn starch at the end, and it really thickened nicely. Definitely will make again.

Balsamic Tortellini

Quite tasty, and I will definitely make again. Though I did make some alterations. Since I have a small skillet, I cooked the bacon by itself instead of with the onion. When it was done, I removed the bacon to let it dry, and used the bacon grease to cook the onions in (also added red bell pepper and two cloves of garlic). Other alterations include adding a small amount of mustard and basil to the balsamic vinegar and adding minced black olives.

Roasted Vegetables

Yummy!! I was looking for a way to get my boyfriend (whose main diet has been bacon and fast food since he moved out of his parents place) to eat more veggies. He loved it! I couldn't find fresh thyme or rosemary, so I used 2 teaspoons of dried Italian herbs instead. Next time I would cut the onion a bit smaller, to really get it nicely mixed in.

Chicken Tetrazzini IV

Delicious! A little bland, so I added garlic and a medley of Italian spices. I also used evaporated milk instead of heavy cream, didn't have wine to cook with, and did not have time to bake it. Even so, it was great!

Simple Turkey Chili

I've been wanting to make this chili for a while, and today I finally did! Delicious and hearty, with just the right spices. I also made some changes: cut the water in half and used 3/4 of the tomato. I used beef instead of turkey, added an extra can of pinto beans, and mashed about half of all the beans. I Topped it with jack cheese, and munched away with some tortilla chips, guacamole, and salsa on the side.
