Fresh Strawberry Upside Down Cake

I was a little scared about this recipe as I've never heard of putting in gelatin and marshmallows in a cake. I used a springform pan so I could remove it easily. half way through baking the juices started coming out of the bottom! I would suggest putting a pan underneath to catch it all. also a little more then half way through it looked like it was done as it the cake was browned but the middle was pretty liquidity. i ended up taking it out thinking it was done then I figured out it wasn't and baked it for about another 20 mins. the cake turned out fantastic! I am defiantly going to be making this one all summer long. oh I have another recommendation, make this the day before and keep it in the fridge, in the pan. its better on the colder side:) and it will keep its shape when you serve it.

Rhubarb and Strawberry Pie

This was my very first pie. I only found frozen rhubarb at the store and it still turned out great, wasn't sour or too sweet. loved it and so did my family. I will defiantly be making this again.

Spinach Stuffed Chicken Breasts

This was a delicious recipe!! defiantly plan on making this more. I baked my chicken in pyrex that was just big enough for the chicken. I check on them 20 mins before the cooking time was up and noticed that there was allot of juices so I drained the dish and left them uncovered for the last 20 mins. The bacon turned out perfect and had a nice crisp to it. next time I plan on not draining all the juices as the chicken was a little dry.

Mexican Rice II

This was the recipe I've been searching for. The rice was just like you get in a restaurant. I had to do one thing different then as called. I did not have cumin and read in my betty crocker cook book you can substitute it with chili powder. I would never recamend doing this.

The Best Chicken Soup Ever

This really is the best chicken soup! I followed this recipe almost to the T, I had a 3 1/2 chicken, only used 1/4 of a onion and no peppercorns, used 1/4 tsp pepper instead. The directions confused me because I wasn't sure how much water to use but I followed as directed and just covered the chicken. it turned out perfect. I noticed that others used chicken breast because they didn't like dark meat. I don't recommended using just the breast. There is much more flavor when you use a whole chicken. Plus if you use a slightly larger chicken you can get more white meat.
