Chocolate Scotcheroos

4 stars only because I felt it wasn't enough chocolate topping--I had to make another batch of it to sufficiently cover the pan. Other than that, excellent!

Honey Mustard Dressing II

Ratatouille

This was very good! Will be perfect in summer when those tomatoes and zucchini are growing like crazy. Might try it with some browned Italian sausage next time, but very good veg dish just as it is, too.

Carrot Cake

This was awesome carrot cake! Made exactly as written except left out the coconut (hubby is not a fan) and left some of the juice in the pineapple (just let the juice drain out of the can, didn't squish it down). VERY moist and loved the chunkiness of it! Very rich though with the frosting--a small piece is more than enough! But SO good!

Marinated Pork Tenderloin

This was just ok for us. I followed the recipe exactly, except that I used organic tamari for the soy sauce (essentially it is soy sauce). The pork and the gravy I made with the marinade seemed really salty to us. Granted, we hardly use any salt in our cooking, so for others it probably is not overkill salty. Just seemed that way to our tastes.

Salmon with Brown Sugar Glaze

So simple and tasted really good! A hit with my whole family--even my picky 3 yr. old! Made exactly as the recipe says, and served with rice and broccoli as suggested. A FAST dinner that seems like you fussed even though you didn't.

Soft Chocolate Chip Cookies II

I usually make somewhat "healthy" cookies, which these are def. not, but made these for a special day at school for my son to take. They looked really nice baked and have a soft texture. I made them just as the recipe said and they were perfect after 10 min. in the oven and leaving them on the pan to bake up a little longer. Only reason I gave it 4 stars is because I really dislike baking with shortening and can't get over the fact that it's in there!

Corn and Black Bean Salad

YUM. This recipe was so good and easy! Took me about 5 min. I did the dressing exactly as the recipe says except I didn't have the cilantro. Tasted awesome anyway! I used black beans, white navy beans, some shredded purple cabbage and celery (added great crunchiness). I didn't have corn on hand but I would think that would taste great too. I've been looking for a recipe to use up all the cans of beans I get for free through the WIC program and this is it! Excited to try it again with different beans/add-ins. Maybe chopped raw carrots next time?

Parmesan Chicken

I followed the recipe almost exactly except I browned in olive oil and used whole wheat Italian bread crumbs to make it a little more healthy. It had good flavor and was great served over noodles and marinara sauce with broccoli and breadsticks on the side.

Whole Wheat Chocolate Banana Bread

This recipe was OK for me--not the greatest muffins I've ever had but for a low-fat recipe that also uses whole wheat flour, pretty good. I did the muffins and followed the recipe exactly. If you do muffins, check after 20 min. Mine were done by then and would have been burned at 30 min. I think if I make again I'd add chocolate chips as well. Although that would obviously make them not so "low fat." :)

Peanut Butter and Apple Sandwich

My kids eat PB&J on an almost daily basis. We always use the Simply Fruit spread so we don't get the added sugars...this is even better--the real deal! Adds a nice crunch, too. I think I liked it as much as the kids did!

Fuzzy Navel Slush

I just finished making up a big batch and a half of this for a Super Bowl party this weekend. As lots of people suggested, I left out the sugar. Was so eager to try it that I stuck a cup of it in the freezer seperate from the rest, just so I could try it sooner. It is SO yummy. Definitely sweet enough withough the sugar! I even only added some seltzer water to it just now because we don't keep soda in the house...still sweet enough for my tastes! I know this is going to be a hit at the party, and go too fast!

Crispy Crunchy Chicken Strips

These were pretty good. The only thing I changed about them was that in addition to the crackers crumbs, I added some crushed Rice Krispies and some wheat germ. The kids never even noticed I snuck in this healthy addition-they loved them and gobbled them up! I personally don't think they had enough flavor to eat by themselves, but with some honey BBQ sauce they were great.
