Savory Zucchini Muffins

Okay, these are great! They came out just as I was hoping they would too. I really wanted to stick to the recipe exactly (as first reviewer suggested) but there were a few items I did not have on hand. So, I used grated carrot and zucchini to make up the 1.5 cups. Used 2 cups whole wheat and 1.5 cup white (didn't have cornmeal) and the texture was still great. Also, used fresh basil instead of dried and white cheddar mixed in instead of parm. These are really so yummy, thank you!

Colorful Chicken Casserole

Great simple base recipe! I used fresh sweet corn and lots of red and green bell peppers, onions, and leeks. I only made half of the recipe and found that 1/2 cup of stock was a bit too much as the pasta didn't soak it all up (though I used whole wheat pasta which may be the reason.) Though the sweet corn added tons of flavor, I also added Tony's for more seasoning. Thanks for the recipe!

Chocolate Chip Pancakes

Very yummy results! My alterations were 1.5 tsp baking powder instead, half whole and half white wheat, regular milk instead (didn't have chocolate,) and added walnuts!

Fresh Fruit Cobbler

Great base recipe and I love the emphasis on fresh fruit! I used pears, strawberries, and just 2 apples for mine and the only other modifications I made were adding a dash of nutmeg, about 1/2 tsp cinnamon, and a squeeze of lemon juice to fruit. I also had a longer cooking time of about 45 minutes. Will keep using this recipe, lovely batter :)

Sausage Cabbage Skillet

Really good recipe! I had to cook it a bit longer since my potatoes weren't super thin (next time I'll try microwaving them for a few minutes first.) I also didn't have green pepper so used red instead. We added mustard upon serving and I added sour cream to mine as well which made it even better. Nice simple dish which allows for variety and additions, like using Tony Chachere's as my extra seasoning.

Zucchini Bread

Really yummy bread! I also used less sugar (1.5c), applesauce instead, and did 2c all purpose and 1c wholemeal. My cooking time was also 60 min and it probably could have gone 5-10 min less. My only issue is my bread turned out a little too dense and flatter than I hoped for. Any ideas why? I am not a huge baker so I'm not sure.

Salmon with Brown Sugar and Bourbon Glaze

I agree with the reviews that said it was too sweet. I even added some chili powder and cayenne to the fish as a rub, but it wasn't enough to balance the sweetness. This dish may be lacking in acid; I won't try this specific recipe again. Sorry Debbie, it was just too sweet.
