I gave this 4 stars instead of 5 because the recipe does not call for any salt or pepper. So, I rubbed the roast down with both before putting it in the slow cooker. Even with this, the Au Jus is not very salty, but it does have good flavor. Next time I cook it, I will take the recommendation of other users and use a dark syrupy beer like Guinness. I had a Bud Light on hand and used it, but the Au Jus was kind of weak and would have really benefited from a darker beer. Otherwise... The meat was really good and the toasting of the buns was a very nice touch.

Pork Tenderloin with Steamed Kale

I gave it 4 stars instead of 5 because you do not want to cook pork to 170 degrees. 155 is the chef recommendation for medium well and this is where I cooked it to. Any further and it would have been too dry to eat. Also, that is a lot of oil. Next time I will cut it down by at least half (that is all I put on the dish anyways). Otherwise... Very good and very easy. My husband loved this dish and my children loved the pork (the kale was a bit too green for them)!

Balsamic and Rosemary Grilled Salmon

Easy and delicious. I did not shake off the excess marinade as suggested; why would you, it is so good? Next time, I won't mince the Rosemary. I will just pull it off the stem and leave it as is.

Stuffed Peppers

These are good, if not a little boring. The recipe doesn't call for cheese, but some parmesan on top for the last 5-10 minutes of baking was much appreciated. Also, if you blanch the peppers ahead of time, there is no need to baste to get tender peppers.

BBQ Pork for Sandwiches

Very easy and very good. The pork just fell apart after 4 hours on high. My only complaint is the amount of servings it says it makes. 3 pounds seems like it would be enough for 12, but 3 pounds of meat is enough for about 10 sandwiches and they were so good everyone wanted 2.
