Cindy's Jambalaya
Wow, I don't think I've ever commented on a recipe on here, but I LOVED this! I did make a few small changes after reading some of the other comments. I used a can of chopped tomatoes with green chilis, added a few shallots (like garlic & an onion combined), omitted the sausage (personal preference) and substituted chicken. I cut up the raw chicken into cubes and cooked it a little with some salt & pepper and used all natural Urban Accents "Cajun Street" (savory, spicy creole seasoning). I found this pre-made spice to be excellent and have just enough heat. Found it at my local grocery store. Absolutely will make this again and my husband loved it too!

Homemade Black Bean Veggie Burgers
OMG so I have never tried black bean burgers in my life but was feeling a little adventurous and decided to try these! LOVED them - so did my meat-eating husband! I would seriously take this over a beef or turkey burger any day! It was definitely not too spicy and I loved the flavor! I used my Magic Bullet to almost puree the onion, green pepper and garlic cloves. I bought fresh rolls at the store and made fresh breadcrumbs out of one of the fresh rolls - super good! I read a bunch of the reviews and decided to make a quick chipotle mayo creation (mayonnaise, touch of ranch dressing, and some hot Mexican pepper powder from McCormick spices). I put tomato slices on it and it was AMAZING :) Will definitely be making these again and again!
