Chicken in a Pot

I really enjoyed this recipe. It was easy and tasty. I did add a pinch of red pepper flake and about 1/2 cup more broth. I served with steamed broccoli for a healthy meal.

Creamy Au Gratin Potatoes

I made this twice and it was good except when I used red potatoes instead of russet it turned out better. I'm not sure exactly why but the red potatoes tasted better. So I will make again and use them. Beside from that wonderful recipe and will make again and again.

Italian Spaghetti Sauce with Meatballs

Great recipe. I made this just as it stated and it turned out wonderful. I added a little bit more parmesan cheese but besides that it was great on its own. I was worried about not cooking the meatballs first but they cooked perfectly in the sauce. I will make these again for sure. No need to buy premade meatballs when these are so easy.

Garlic Chicken Stir Fry

This recipe is just plain good. I don't have any complaints or changes. I used broccoli instead of the peas just because my store was out. But it would have been good either way. I used a skillet not a wok but it worked just fine. I personally added chili sauce to the finished product but my husband doesn't like spice so left it out. He loved this dish too. I will make again probably this week since i have no use for cabbage. =)

BBQ Chicken Pizza II

Mushroom Blue Cheese Turkey Burgers

Great and easy recipe!!! We used chicken instead of turkey and green onion instead of white onion. It turned out great on the foreman grill. I will make again and again.

Easy Spinach Lasagna with White Sauce

I changed a few things about this recipe. I sauteed onion, garlic, carrot, broccoli, and the spinach. I used one 15 ounce container of Alfredo and mixed it with 3/4 cup milk. I took the ricotta and added one egg and red pepper flake (maybe 1/4 tsp). I layer like instructed but add about two tbsp of mozzarella cheese to the layers and then the rest to the top of lasagna. I also added about 1/4 cup of grated Parmesan cheese. Then i topped it all off with panko bread crumbs and sprayed with cooking spray. It was as good as the Stouffers Vegetable Lasagna. But i'm sure much lighter!!! So yummy I will make time and time again.

Spicy Mexican Style Zucchini Casserole

I made this recipe as is except i added one green and red pepper. I also used about 2 lbs. of zucchini instead of 3 lbs. I omitted the oregano and used 1 cup brown rice instead of long grain. It was good but a little spicy for my husband I love spice so it was perfect. I also didn't cover it while cooking and it was fine. I will make again.

Slow Cooker Buffalo Chicken Sandwiches

These were very salty. Good for a dip but not a whole sandwich. I would use just hot sauce not buffalo sauce.

Pumpkin Toffee Cheesecake

I have never made a cheescake probably because it seemed so hard. But this recipe was easy. The crust need an extra 2 tbsps to set properly at least for me. The only thing I would change is I would aad either pumpkin pie spice or clove and nutmeg to give it that pumpkin flavor. It was a bit soft for a cheesecake but for cooking it in the toaster oven it turned out great. =)

Rich and Simple French Onion Soup

This is a great recipe!!! Perfect french onion soup. Not too rich, not too salty. I made it as is but added a small amount of balsamic vinegar to the onions and let is cook for about 5 minutes.

Mexican Lasagna Lite

This tasted really good for a low fat recipe. I had a little trouble spreading the beans maybe next time i will spread it on each tortilla before layering. I also added green onions on top before serving.
