Italian Sausage Soup
I made this this morning for two good friends who are not feeling well, for lunch on a cold day and for them to freeze the leftovers. Served with crusty baguette and assorted cheeses. Maybe it was the reheating or the company but it was very, very good. I will make it again soon for just us. By popular request I will increase the baby spinach to 1 1/2 bags, already doubled the garlic. Luckily one of our local stores carries bulk mild sausage so I won't have to strip it out of the casings. One of the reasons for winter is great soups like this!

Made this for a viisiting almost-vegan friend. Used veg broth, subbed red potatoes for the zucchini and crushed tomatoes for sauce, as suggested in reviews, forgot the pasta and omitted the parm topping. Dee-lish, needed salt. Next time I will use 4 cloves of garlic, 3 onions, 3 cups of celery, 2.5 broth and 1.5 water, 1 cup wine, 2 cans kidney beans and fresh green beans instead of canned. It will be better!
