German-Style Spinach

I made this as a German side dish for an Octoberfest party and it was delicious. One of the young men proclaimed it his favorite dish of all. It is full of flavor and not boring. It brings spinach to life.

Grandma McAndrews' Irish Soda Bread

After 5 years of searching for the ultimate Irish Soda bread, this recipe is the winner. I use half regular raisins and half golden raisins. The only other change is the oil: I used 2 TBS canola oil and 3 TBS applesauce to reduce the fat...no noticeable difference. Everyone at work LOVED this. Thanks to your late gramma for this recipe!

Lemony Quinoa

Really good! Used toasted pecans in place of the pine nuts. Added a dash of curry as someone else suggested. Also cooked quinoa in half water, half chicken broth. Very good recipe; thanks!

German-Style Pickled Eggs

Maybe I dont know enough about pickled eggs. I made this recipe for a party, exactly as written, based on all the awesome reviews. I marinated 3 days before serving. The whites of the eggs were tough. Is that the expected texture of a pickled egg? The flavor was okay, but we were put off by the chewy toughness of the egg.

Creamy Potato Casserole

Very good. I reduced the sour cream to one cup and the butter to 2 Tbs based on the other reviews. I also thawed the O'brien potatoes in a colander under running water. I used reduced fat Cream of Celery soup & added garlic powder. I did not heat the soup, butter & cream prior to mixing in; I just mixed everything in a large bowl(stir the soup smooth first) and turned it into a casserole dish to bake. Sprinkled with paprika for color. It turned out very good and I did not have the mess of another saucepan to clean. Good recipe.
