No-Cook Eggnog Ice Cream

I made this recipe as written, but added 1/4 tsp nutmeg & 2 tsps rum extract. It had a rich eggnog flavor and creamy texture. Definitely one of the best ice cream recipes I have tried. One thing to note, is that it definitely needs to firm up in the freezer for a little bit, because it comes out almost too soft to eat.

Meatball Nirvana

Delicious! I used tomato sauce instead of hot sauce (1/3 C for 2.5 lbs of ground beef). I used 1/2 tsp thyme, and Panko bread crumbs, omitted the milk and Worcestershire sauce. I baked for a little longer because my meatballs were larger. This makes very tasty meatballs! Another tip is to freeze meatballs and reheat in a crockpot in your favorite sauce for about 3-4 hours on low. The meatballs come out very tender.

Campbell's® Green Bean Casserole

It was really bland. My family gave it a thumbs down and I threw it out because no one ate it. It needs more seasoning, maybe use cream of chicken soup and real mushrooms. I won't be making his eagain!

Shrimp Scampi Bake

This is just incredible! I used frozen Langostinos instead of shrimp. I cut the butter down to 1/4 cup by adding approx 1/4 cup good quality EVOO instead. I served over pasta lightly sprinkled with olive oil, and sprinkled with grated cheese (Romano, kasseri, and fontina, but any Italian cheeses will do). I poured the sauce from the pan over the pasta, and served the Langostinos on top. It cooks quickly so make sure you prepare the pasta and grated cheese first. My family gobbled it up like it was their last meal!

Make Ahead French Toast

This is really delicious! I used Sarah Lee Texas Toast and followed tips from DivineHealth on spices. I used fat free milk and half & half, and used all the eggs in the original recipe. I sprayed the baking pan with Crisco Butter spray, and lifted the slices in the morning to spray the pan again before baking. It was delicious and decadent! My family loved it and it will become a regular for Christmas brunch.

Split Pea and Ham Soup I

Very good recipe. I added half cup of chopped carrots and celery, thyme, and used 2 cups of chicken stock. It needed about 6 cups of liquid to 1 lb of dried peas. If it gets too thick, you can always add more water. Make a large batch and freeze it.
