Awesome Carrot Cake with Cream Cheese Frosting

My entire family loved this cake! I've never made carrot cake for my family before, and they were pretty skeptical about it (one of my sons can't stand carrots, and the other can't stand nuts in anything I bake). But they both loved it, and in fact, each has said they want the same thing for their birthdays. Suffice it to say, it was a hit!

Yam Casserole

All I can say is WOW!! I've made this 2 years in a row now. The first year I made it, only we yam-lovers indulged. The non-believers only nibbled. The next year, even the non-believers indulged, and this year, I've already had special requests to make it...like I have a choice!

Chicken Fried Pheasant

This was my first time EVER making pheasant, and I'm glad I found this recipe to use as a starter. I tweaked it just a bit. I crushed the crackers in my blender, and added a few spices to the mix: thyme, onion powder, garlic powder, pepper, and some fresh rosemary and basil that I still had left in my garden. I also left the legs and breasts intact. It was so good, my family said we should open a new franchise with it: KFP (Kentucky Fried Pheasant)!! They loved it!

Magnificent Cheesy Brown Rice

A wonderful alternate to what can sometimes taste like cardboard! I make it with chicken bullion instead of plain water, and add about a 1/4 cup more liquid than suggested. I then also add about a 1/2 can of mushroom soup, and spread the rice in a casserole dish (prepped with Pam) before putting the cheese on top of the dish. Then I put the dish in the oven on about 425 degrees until the cheese is melted and a little golden. It's absolutely to die for!

Cranberry Dip

I loved this recipe!! I took it to our family's Christmas party, and by the end of the night, even people who staunchly avoid cranberries couldn't get enough. Quite comical, really. I actually ended up leaving the leftovers (what little there were) at our host's home, because she really couldn't stop eating it. So yes, I will definitely be making this again i the future!

Todd's Famous Blueberry Pancakes

My husband and I made these for dinner tonight...WOW!! We did follow one user's suggestion of adding the berries after pouring the batter on the griddle. My hubby also got creative, and instead of blueberries on a couple of the pancakes, he added Reese's Pieces...to DIE for!! I will definitely be making these again and again.

Baked Ham with Sweet Glaze

OMG!!! We made this for my husband's birthday dinner. As I'm typing, he's still sitting there saying, "Oh my gosh!!," and, "Really?" I honestly think this is the best ham I've ever eaten, and so does he. We don't care for the extra candying of the pineapple and cherries...instead we had applesauce on the side. But I can assure you, even without those extras, this was the best ham we've ever had. Thank you so much for making me look good on a special day! :-)
