I am a sort of young guy, Medically retired due to COPD/Emphseyma, I stay active by Riding my 07' Roadstar M/C and going places in our Motor Home. I am Married, (have been for 35 years) and my wife is my Cheering Section! My Kitchen, My Rules!
My favorite things to cook
I love to prepare Cajun food. My specialty is a Rubbed Pork roast, rotiserried, served with a Cajun Rice dressing, Cheesy drop biscuits, and a Coconut custard pie for dessert. I also love to make a big ol' pot of Gumbo, whether it be Chikin & Sausage, or Shrimp...Mmmmm GOOD! I can go on for days about Cajun food. I also like to Smoke alot (not that kind of smoke) I also like to do some Italian as well.
My favorite family cooking traditions
Deep fried Turkey, with all the fixins. Slow smoked ribs, with some Bourbon Baked Beans & Biscuits Mustard grilled Pork Chops
My cooking triumphs
A pan of Penne noodles, a home made 4 cheese Alfredo Sauce, some grilled spiced Chicken breast meat, Artichoke Hearts, Sun Dried Tomatoes, abd Cayenne Pepper to kick it up. WOW! Not to blow my own horn, but I am told that most every dish out of my kitchen is Mmmmmm.
My cooking tragedies
Eggs! Watery, nasty eggs! I hate them.....

Sarge's EZ Pulled Pork BBQ
I changed the coffee to 1/2 cup, and added a good dash of Liquid Smoke. This made an excellent pulled pork sandwhich after topping it with a sweet slaw, and severed it with Bourbon Baked beans.

Jammin' Tarheel Chili
Made this Chili, but omitted the Mushrooms, and Celery...This Chili is & was AWESOME. It has a sweet flavor, witha slight bite due to the cheyanne pepper. Highly recommend it to anybody who loves a good chili. I also used stew meat instead of ground beef. Very tender, and tasty.
