To Die For Blueberry Muffins

I LOVE THESE! Actually everyone I have made them for loves these. I've made the recipe "as is," and with 1/2 whole wheat flour, and into 12 smaller (kid friendly) muffins. They always turn out fabulous. These are the most highly rated muffins for a reason!

Mexican Chicken and Tomatillo Stew

I loved this! I needed a recipe for some tomatillos from my CSA and found this. I had some Baked Tostitos on hand, so I didn't make my own tortilla strips. I will definitely make this again and again.

Lemon-Basil Fruit Dressing

LOVE THIS! Sweet, tangy, creamy, perfect! This is wonderful and I will definately be making it again. This is a thick creamy dressing and will work as a dressing or dip.

Eggs Royale

This was great! I found this recipe in an effort to use up some plain (not seasoned like the recipe calls for) dry bread cubes leftover from making Thanksgiving stuffing. My 5 year old announced this to be his new favorite food. It also made getting ready for a morning brunch easy. It was great to have this ready and waiting to be baked.

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

YUMMMY! My guys loved this and the 5 year old said that I need to make it the next time his aunts are over. The recipe is great as is, but the guys thought it would be ever better with a little peanut butter. So, we tried and sure enough, it's awesome with a little PEANUT BUTTER. I think I may add 1/3 as the sauce is thickening next time.

Fluffy Whole Wheat Biscuits

My family loves these! They mix up quickly so I can make them anytime. I roll them out into a rectangle, skip the biscuit cutter and just cut them into squares. It's easier and I don't have to deal with biscuit dough scraps.

Seminary Muffins

My son always wants to buy bananas, but doesn't always eat them. This is my favorite way to use our extra-ripe bananas. I use paper muffin liners and a #20 scoop to fill them. The recipe makes 18 this way and not 12. It's a better size muffin for us with kids and calorie counters. :)

Vietnamese Tofu Salad

I love this recipe (and so do a lot of my friends)! It's good the first day, but even better left over after everythings "marinated" for a day. I really like the tofu cooked like this. I am going to cook the tofu like this, add some veggies and turn it into a stir fry.

Mediterranean Barley Salad

This is a great salad and very easy to make! I accidentally got quick cooking instead of regular barley. I used 1 1/3 cups with 2 cups of water and only cooked it for 8 minutes. This worked. Although, I am going to be more careful and buy regular pearl barley next time.

Baby Doe's Cheese Soup with Beer

I used to work at Baby Doe's and have searched for years to find a soup like theirs. This is wonderful and brings back some great memories. I like it best with a lighter beer. My husband bought a dark ale one time and it was a bit overpowering, but still a great soup. Thanks for sharing!

Hummus III

This is a family favorite. My 3 1/2 year old helps me make it 2 or 3 times a week. I usually use 1 can of chickpeas (rinsed and drained). It's not a full 2 cups, but pretty close and I like the way the texture turns out. I also usually blend in some (or all) of the olive oil if I know that we won't eat all of it immediately. Thanks for the recipe!

Caramel Apple Cake

My family loved this! Even my 3 1/2 year old who has refused every cake, brownie, and cupcake offered to him in his life ate a piece. I did follow the suggestions of others and used milk instead of water, 2 eggs, 1/2 tsp vanilla, and chopped apples to the batter. I wasn't sure how much brown sugar to use (if the 1 1/3 cup the recipe called for was 1/3 cup for the topping and 1 cup for the batter or if it all went into the batter) because the butter was not a combined measurement, but the cinnamon was. I used 1/3 cup for the topping and 1 1/3 for the cake. It turned out wonderfully!

Quinoa Tabbouleh

I LOVE this! Tabbouleh is one of my favorite salads, but I had never made it before. I cook quinoa a lot. So, I had to try this. It has quickly become a family favorite. I took it to a potluck brunch and I lost count of how many people wanted the recipe. The only change I made was to use a whole bunch of parsley instead of just a cup, but that's just because I like my tabbouleh with a strong parsley flavor.
