Old Fashioned Peanut Butter Cookies

They where pretty good but a little dry and crumbly....i prefer chewy peanut butter cookies but they were still really peanut buttery =) I added a little more peanut butter than the recipe calls for and didnt use peanut butter chips though

Spinach and Feta Pita Bake

I love making this for dinner or for a snack.. its one of those things thats really good warm, but still really good cold the next day. The only thing i do different is leave out the olive oil because the pesto is already pretty greasy and I add red peppers and onions

Apple Scones

Just what I was looking for instead of all the milk I used 1/4 cup sour cream and 1/4 cup milk it turned out perfect and moist, and I loved the apple cinnamon flavor

Butter Bean Burgers

These were really yummy tasting, but they didnt stay together very well while cooking and were extremely oily. I used olive oil instead of vegetable oil...but other than that followed the recipe exactly. Next time I will probably follow suggestions to use either extra saltines, or bread crumbs, and bake them instead of frying.

Spinach Enchiladas

Really good but i did not really follow the recipe all the way...I had to improvise a lot with what I had in my kitchen. I sauted an onion and garlic in olive oil instead of butter, then added the spinach, some muchrooms, and green onions. Instead of ricotta and sour cream I used cottage cheese, half a can cream of mushroom soup, and shredded cheddar cheese. I rolled the spinach cheese mixture in flour tortillas, and only used about half the can of enchilada sauce, and shredded more cheddar on top... An odd mixture I know, but it turned out delicious ;)

Roasted Butternut Squash Soup

I just made this and it turned out wonderful. I have never made soup before either so I can say with confidence that it is very easy to make. I followed the recipe almost exactly...except I left out the corriander and instead of using a potato masher I just mashed the squash with a fork...but it turned out wonderful. The panko breadcrumbs and the pumpkin seeds blended perectly on top of the soup!
