Chicken and Red Bean Enchiladas
Great way to use up leftover rotisserie chicken. We loved it. I used a 15 oz can of enchilada sauce (try an authentic brand, not old el paso)simmered with onion and a can of tomatoes. Then threw in some corn too as well as listed ingredients. I also quick-fried the tortillas for a few seconds in a skiller with a bit of oil, but not sure if this is worth the trouble. Gives them a very nice crispy chewy texture but may be lost after dousing in enchilada sauce! Either way we loved it and will be trying again soon.

Easy Vegetarian Red Beans Lasagna
Very good, I really enjoyed the simplicity of the recipe. Quick, non fussy, just a few ingredients. I baked it longer to develop a nice browness. I also used parmesan with cheddar, since this is a bechamel sauce any aged cheese works well so don't be afraid to experiment. My son was initially let down as there was no meat in the lasagna, but I told him it was a different type and the flavors were meant to be more subtle. By the end of the meal he seemed to be enjoying it more. Not sure if I would make it exactly like this again, but I do think it's a good idea.

Cha Cha's White Chicken Chili
This is a good basic recipe, and my family enjoyed it a lot. Nice change from regular chili. I had to spice it up a lot to suit our tastes however. I used more seasonings, and added pureed chipotle with a little adobe sauce. Also, instead of the two cans of peppers I used a can of Herdez green salsa. And I added lime juice at the end.
