Broccoli With Lemon Almond Butter
Was a nice way to serve broccoli. I did toast my almonds (which I crushed) on a pan, then added 3 TBL butter and 1/2 lemon and then did the rest as originally state. Didn't get any accolades, but didn't get any complaints from the usual complainers either.

Slow Cooker Cilantro Lime Chicken
We all really liked this dish. I only had 1 1/2 lbs chicken but still used the whole jar of salsa - so I used the full amount of everything else. Added 6TBL cilantro, which wasn't overwhelming. I also added about 1/2 cup of rice, there's not a lot of liquid so I hesitate adding any more. The shredding is really a preference. I think it might have even made it taste a bit dry. Next time I will cut/rip it into chunks after it cooks. Some of ate it with tortilla chips, others in a tortilla, but it would also taste good over rice.

Zucchini and Potato Bake
I thought this looked rather basic and it was - I don't understand all the rave reviews. My kids still thought the zucchini tasted like zucchini - which they don't like. I love my veggies but overall thought the dish was just ok, and really the zucchini was too overcooked to taste very good. Maybe if it was inseason....or I had some super special paprika or specially seasoned bread crumbs?? I even added some parmesan.
