Alyson's Broccoli Salad

Very rich. Two heads of broccoli wasn't enough to balance out the other ingredience. Next time I will use four and try one less tbsp of vinager. Really good though.

Boilermaker Tailgate Chili

This chilli turned out really well. My roommate helped with the chopping which was little extensive, but expected. It made quite a bit and weighed in at 19lbs. Thanks for lots of leftovers.

Eggplant Parmesan II

This was my first experience with egg plant and this was a good recipe. Mind you, the actual egg plant taste was quite mild compared to the other flavors. I used a jar of Classico sauce, 2 egg plants and extra cheese. The only real change I did was too bake slices for 20 min. Thanks.

Best Tuna Casserole

Very hearty. I was really hungry so I used the whole bag of noodles, 3 cans of soup and 1.5 cans of milk (soy). Turned out great. I think I remember having it with celery before. I'll add that next time. Get your veggies in where you can. Thanks.

Brown Sugar Meatloaf

Really good. I think I will put the ketchup and a little brown sugar on top rather than the bottom. I don't make meat loaf often, but I was surprized how much juice poured out when I was finished. Thanks.

Pepperoni Pizza Pita

These are a great snack/meal. I brush both sides lightly with olive oil and bake at 400 for 10 min. Comes out perfect. Deli ham and pinapple is really good. Thanks.

Spinach Stuffed Chicken Breast

This one really didn't turn out good for me. I probably didn't make it right. There was too much liquid, I should have strained the spinach and the bacon wasn't fully cooked underneath. I guess you can't win them all.

Suki's Spinach and Feta Pasta

I was really impressed with how well this turned out. I love the fact that it is all natural ingredients as opposed to the canned sauces, with all their preservatives that I usually buy. I added extra spinach, but I could have added more... next time.

Breakfast Sausage

A very good sausage recipe. Being on a health kick, I used half ground turkey. I am a big fan of Tim Horton's Sausage & Egger up here in Canada and I wanted to find a homemade version of the sausage. I think next time I make it, I will add more hot spice as I would like a bit of a zing to it. Thanks for the recipe. Oh and I liked the rolling pin idea, except they shrunk to 3 inch diameter - they looked so cute.

Banana Banana Bread

I was unsure how to mix everything so I used a blender except at the end when combining the dry ingredience with the moist ones. Everyone was really impressed with how it turned out.

Wow, these were good. I liked adding the rub sugested by others as it added a nice zing, plus you must broil for 10 min as well. Fall off the bone goodness.

Blueberry Zucchini Bread

This was awesome zucchini bread. I followed some peoples advice and used half applesauce instead of oil (sweetened), and I used half the sugar. It was plenty sweet for me. I only had a 9x5 banana bread pan, which worked fine except it took an extra 25 min to bake. And it came out looking like a loaf of bread (which flattened when it cooled). Baking rocks!
