Beef and Rice Dish

Very bland, however very economical to make. I made a few changes to enhance the flavor, added black beans and taco seasoning. Even after that I had to add a fair amount of salt. I will make this again with a few modifications.

Chinese Chicken Fried Rice II

Great recipe, tastes even better than my favorite Asian restaurant. I sauteed frozen peas, a clove of garlic and finely diced carrots with the onions. For the best results, use COLD rice. I like Jasmine rice, once you use it, you will not go back to Uncle Bens! My family gobbled it up. Next time I will try to make it with shrimp and maybe add a little ginger. Thanks Lisa!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

I have been trying for years to duplicate restaurant pasta and this is the "spot on" recipe! It was a huge hit for my family. I made a few subtle additions. I added 3 TBSP of minced onion to the mushrooms, used chicken broth to smooth the sauce (instead of plain water), added 1 can of drained petite diced tomatoes and 1 cup of coursely chopped fresh spinach (all done in a dutch oven). I also used raw white peeled shrimp which I feel is more tender than precooked. I topped it with fresh parmesan cheese and served with a loaf of hot Italian bread. It was also great leftover, as most pasta is! Beautiful presentation as well.
