Aloo Phujia

So far the only dish i've made that my indian relatives gobbled up. Made a few changes 1) double the recipe except tomatos (for double I use 1 whole can of chopped tomatoes)- throw in some frozen peas for colour 2) cooking time - I leave it on low heat for almost an hour after adding tomatoes until it is a reddy brown colour and much drier. It is then very easy to eat with rotis by hand!

Baingan Bharta (Eggplant Curry)

Used coconut flavoured yogurt and it tasted just fine - but indian family members said it had a flavour they couldn't put their finger on - and that traditionally they don't use yogurt or sour cream at all.

Eggless Chocolate Cake II

Will definitely add chocolate chips next time, as they came out fine but lacking sweetness. I made up for it last time by using mocha frosting and vegetarian friends loved them.

Carrot Pineapple Cake I

very very moist - which made it tricky to bake in round tins (but managed) I only used the icing between the 2 layers and made a quick sugar / water / lemon juice syrup to brush on the top. It is an excellent cake definitely ruined the diet for the week.

Indian Tandoori Chicken

Great recipe - my Indian partner was amazed. It has become known as my 'pink chicken' as I didn't have any yellow food colouring but didn't affect the taste. Added extra green chillis to make the grade with fire eating other half.

MMMMM... Brownies

I was desperate for a recipe one fine day once I realized I had run out of Ghiradelli brownie mix. This did not disappoint - equally as good if not for the several steps involved. Family was impressed that they were made from scratch! THANKS!!!
