Best Baked French Fries

Wow! So good--crispy outside, and tender inside. I'm deleting the rest of my baked "french fries" for this one. Next time I'll try it with sweet potatoes.

Old Fashioned Potato Salad

If you use red potatoes, there is no need to peel--the peels add color and flavor. I use some chopped dill pickle in addition to the sweet relish, and use a little pickle juice to add tang and cut down on amount of mayonaise needed.

Guadalajara Soup

Yum! I love experimenting with new recipes, and this is one of the best ever. I used pork chops, which I browned and boned, then added to soup. We topped our soup bowls with sour cream, diced tomatoes, grated cheese, and cilantro. Wonderfully satisfying!

Delicious Egg Salad for Sandwiches

I have been making egg salad just like this for years, except I add about 1/2 cup or so of grated cheddar cheese. It is out of this world!

Cheesy Rosemary Potatoes

This was fantastic! Better than potatoes augratin, and easier too. Didn't have rosemary, so used Italian seasoning--excellent! If you need to speed things up a bit, pop the diced potatoes in the microwave for five minutes or so before combining everything. This will definitely be one for company dinner or for potlucks.

I make these as written, except I add about 1 tablespoon Worchestershire to the tomato sauce/water mix. Also, instead of baking, I sometimes just cook the meatballs covered in the same skillet I used to brown them--one less piece of cookware to wash.

Easy Baked Tilapia

I did not have Old Bay Seasoning, so used salt, lemon pepper, garlic powder, and onion powder. Otherwise did everything per directions. It was incredibly tasty and satisfying. The veggies were yummy with a mild taste of the lemon. Served with rice with sauteed onions, green, yellow, and red peppers. It made for a beautiful, colorful plate.

Tamale Pie I

This recipe is similar to one our family has used for years. But we up the flavor by adding salt, pepper, and enough chili powder to give it a little bite. Also, we use whole kernel canned or frozen corn instead of creamed corn for improved texture.
