I love cooking/baking anything. I also really like things that give me a challenge.
My favorite family cooking traditions
Every Christmas my family has been baking our families cookies recipes. I also cook Thanksgiving dinner every year for my family of about 20.
My cooking triumphs
I am very proud of homemade hot dog/hamburger buns. That look store bought but are soy free. My BBQ sauce (which is tomato free) is a source of great joy for me.
My cooking tragedies
I try to block those out. At least once the smoke has cleared ;)

Easiest, Most Delicious Meringue Buttercream
I just finished making this frosting. I don't normally like butter cream but this is the best I have ever had. I heated the egg white to 160 as others said. I used the bowl from my stand mixer and just quick ran it over to my mixer. Saved on dishes. I also did as another reviewer states to just keep beating it until it come together and it did. Just like magic it thicken back up. This is worth the extra effort to make. I will only use this butter cream from now on.

Classic Waffles
I used this recipe as a base for a gluten free waffle. I used my own Gluten free flour blend. I used only a 1/2 tsp salt, and an extra tsp of baking powder and a 1/2 tsp of cinnamon. I also separated the eggs and beat the whites until stiff but not dry and then folded them in to the rest of the batter. My waffles came out fluffy and crisp. which is hard to get with GF. I only gave it 4 stars since I change the recipe and have no idea what it would taste like made with normal wheat flour.

Chicken Encilantrada
A great recipe but it definitely needs cumin. I made my own green chili sauce in place of the green salsa (canned green chilies, cumin, garlic). I cooked the onions until they were almost melting before I added the chicken, chili sauce and chicken broth. Then I cooked down the liquid and only added the cilantro after I turned off the heat since cilantro is a delicate herb. I served this nacho style. I lined up tortilla chips on a baking sheet. Spread a layer of the chicken mixture and then topped it with cheese and baked until melted. I served the nacho with sour cream and beans and rice on the side. Even my three yr old ate it up.
