Sam's Famous Carrot Cake

Excellent recipe. I use melted coconut oil added last & mixed in well rather than veg oil, and I have substituted gluten-free flour occasionally with no problems to the results.

Kalamata Olive Tapenade

Excellent! Halved the capers, and only 2 cloves of garlic, was perfect. Today I added 3 tablespoons of the tapenade to my breadmaker and made a gorgeous olive bread with it! Thank you! A keeper!

Penne a la Vodka II

Fabulous recipe, we make it about once a month. Half to 40% of the cream though, and it's still excellent, we don't like it too creamy :). I usually chop the tomatoes in small pieces before adding to pan with juice from tin. Thank you Liarose :)

General Tsao's Chicken II

Loved it. Only changes: My son was preping the chicken and tossed in cornstarch without the egg mix, so we threw the egg mix on top and tossed it, became more like a tacky batter but fried up beautifully :) Also, found it a bit salty so next time will use light soy. Thanks ChefDaddy, a keeper!

Chewy Chocolate Chip Oatmeal Cookies

Fantastic! Naturally we had a few changes. Didn't add chocolate chips. Added 2 cups of freshly grated coconut plus the coconut water from it. Chopped 6 dates small and tossed in. Used pecans in place of walnuts, and used 2 cups of large oats in place of 3 cups of quick-cook oats. All of the changes because this was what was in the house, but omg, fantastic!! Thank you Panthera, fabulous recipe :)

Thai Peanut Chicken

Excellent recipe. I too found it too dry so added about 1/2C water as it was cooking, most of it cooked off, and left a creamy mix, the flavour wasn't compromised at all. I used light Soy sauce and regular salted peanuts. Lovely. Will be a regular week night meal, very easy to prepare

Asian Salad

Great base. I added grated ginger and 1/2 tsp of toasted sesame oil to the dressing, cut the oil in half as suggested by others. Substituted 3 TBSP Maple syrup for the white sugar and reduced vinegar to 3TBSP apple cider vinegar. Didn't heat it because I didn't use the sugar. Added orange segments. Excellent. Thank you :)

Grandma's Polish Perogies

Awesome Perogies, and my first time ever making them. In future I will get my teens helping me, it is time consuming, but easy and well worth the effort. Made Cheese & Garlic, Cheese & Bacon and Cheese & Onion. Didn't have any processed cheese sauce so omitted, and they were still excellent. Had plenty of potato left over, so threw in a can of crab and made Crab Cakes. My Kids are looking forward to making them next time. Thanks Steph :)
