Roasted Brussels Sprouts
I absolutely adore this recipe, but like most others, I tweak it a bit. Used about 1 T olive oil, then another 2 T of melted butter, added 1 T garlic powder, 3 T white wine, 2 T spicy brown mustard, then the salt, pepper, and a dash of white wine vinegar. I'm sure it's delicious with just the 3 ingredients, but mine were spectacular. I also cooked them less than the time indicated, and they still turned out nice and brown/ caramelized.

Ground Beef Enchiladas
Great recipe for enchiladas, like many, I changed a few things. First big thing is I used rotisserie chicken for my meat, as well as using some left over "hoppin johns" as a kind of bean spread inside the corn tortillas too. Used a can of enchilada sauce, 1/3 spread on the bottom of the pan which made cleanup SO SIMPLE, the other two thirds on top of the completed enchiladas, before I spread the remaining cheese mixture. For that mixture, I used healthy request cream of chicken soup, part lite sour cream, part cottage cheese, part plain greek yogurt, finished with about a cup of cheddar/jack cheese. Used the remaining cheese to sprinkle on top. Delicious!

Grandmother's Buttermilk Cornbread
This cornbread had amazing flavor, I wish I would have followed the recipe a little more closely, or just added a bit more liquid (or maybe an extra egg).... mine turned out a little bit too crumbly for my taste, but the flavor was amazing. I tend to always change recipes, so instead of the 1 cup butter milk I used 1/4 c whipping cream, 2/3 cup organic 2% milk, about 2-3 tablespoons sour cream, and a tablespoon of lemonjuice. Everything else was basically the same, except I used 1/2 a cup white flour, and 1/2 a cup whole wheat flour. I did it exactly for 30 minutes, and it was definitely ready. The only reason I did not give a 5 was b/c i had wished it was a little less crumbly
