Apple Pork Chops

Plain Caramel Apples

Malasadas Dois

I made these malasadas. They were better than average. I am sure with some practice, they will get even better. The dough was a little soupy, so I added a bit of flour. I could have mis-counted the flour, but I really should be able to count to 8. We only have a half cup measure. I cooked them on the stove in a skillet and in a fry-daddy. The fry dadddy would only hold one at a time, but the temp was perfect 340 degrees. The pan on the stove help 4 at a time but was really hard to keep a constant temp. I used a digital temp probe (sneaky).

Barbecue Beef Cups

This recipe was very tasty and very very easy. I started with a fresh onion, sauteed it with a little butter and some garlic. I'm not a big fan of BBQ sauce, so used marinara instead, it was great, this is a keeper.

My portugues grandmother also made these. They are nearly classic meringues, in our family always topped with those little silver candies that look like BB's. My grandmother made these with the left over egg whites from malasadas or masa. The recipe that I am reading shows 12 eggs. If you use the egg yolks, you will end up with flat sweet scrambled egg cookies. I used egg whites not whole eggs,sugar, salt, orange juice as instructed but added lemon rind, because my grandmother added lemon rind to everything. I cooked mine for about an hour, then left them in the warm oven for another 30 to 45 minutes. They were not as good as my grandmothers, but she had 40+ more years cooking experience than me.

If you cook these properly, these are magical. They are very sweet. The prep is very quick. These are easier to make with whole milk. With 2% they don't seem to get as golden brown or have the same texture. The time these were all mushy on the inside I blame on the 1% milk. If you make these and they turn brown before the 30 minute mark your oven was too hot and they will not be cooked inside. Greased your muffin pans well and they should not stick. If they do stick, try to slide a butter knife around the edge. If that does not help you may need to cut them in half and get them out one half at a time.
