Foolproof Rib Roast
This recipe reminded me exactly of the way my mother made it when I was a kid. Since I was using a huge roast (about 8-lb), I added about another 30 minutes to the roasting time. The roast cooked to a perfect medium-rare and everybody loved it. I would definitely make this again next Christmas. Thank you very much.

Amish Breakfast Casserole
I made this for my family on Christmas morning, and they all loved it. In hindsight, I probably should have used the sausage instead of the bacon, since it would be easier to dice. But all in all, it came out perfectly. Thank you very much for the recipe, & Happy Holidays.

Cajun Crawfish and Shrimp Etouffe
One of the best things I have ever made. Since I couldn't get any crayfish where I live, I just used another pound of shrimp, instead. It turned out perfect. Thank you.
