Best Spanish Rice

This is so easy and the taste is just like many Mexican restaurants in our area. I did have a little trouble getting the rice cooked thoroughly even after saute-ing (sp?) it with the onion in the beginning of the cooking process. I agree that this recipe needs a little more liquid but only just a tiny amount, perhaps a tablespoon or two. Also, I feel it needs a little more zip to it and I may add chili powder and/or cumin next time. Overall, a great recipe!

Baked Swiss Steak

This is easily made GFCF. I used Bob's Red Mill AP flour, Lea & Perrin's Worcestershire, and skipped the cheese. Very good dish...the only thing I will change next time is to puree the stewed tomatoes. My kiddos weren't keen on the big chunks of tomatoes.

Mom's Turkey Sausage Patties

Great sausage taste! I would have given this five stars had I not needed to alter the recipe. On the advice of others, I used the given seasoning measurements (minus all the cayenne due to my kids) in 20 oz of turkey because that is the amount in the packages I purchase. I really don't feel the seasoning in the given amounts would be enough for two pounds of turkey but it's just right for 20 oz..

Jasmine's Brussels Sprouts

I did not use bacon at all but rather, four tablespoons of saved bacon grease. These were incredible! I could make a meal out of just these and an added bonus, my kids LOVED them. Thank you!!!

Sweet and Spicy Sweet Potatoes

These were awesome!! Great flavor combination with the sweet and spicey. I may even try adding some cumin next time. We always have sweet potatoes in the house so I am always looking for a different way to cook them. My only complaint was that the potatoes never got a "roasted" type of crispiness to them. I may take the broiler to them in the last few minutes of cook time the next time.

Creamy Split Pea Soup

I made this recipe using saved bacon drippings and no bacon. We are a dairy free family so I used coconut milk in place of the cream. We like our soups a little chunky so I used a potato masher to mash around in the soup a bit. This soup has really good flavor and had I pureed it, it may have been thicker, however, there is still the fact that we like our soup chunky. That said, next time I would probably use less water. Overall, a great recipe. We ate it with cornbread muffins. Thanks for posting!

Easy Chickpea Curry

I have been making curry almost weekly for quite some time now. For some reason, I got a bug to try a new recipe and this is one that popped up. I chose it because of its use of garam masala and turmeric - true flavors of India. My family eats a gluten and casein (dairy) free diet so I did make some changes. My replacements were as follows: butter - Earth Balance soy-free milk - DariFree milk replacer sour cream - Tofutti Better Than Sour Cream chicken bouillon - Gluten free all-natural chicken flavor concentrate I also only had one regular potato so I used it and a sweet potato, as sweet potatoes are what I typically use in my curry. I did not add the ground almonds because I didn't feel it needed thickening. Others mentioned they did not add the ketchup. I did but didn't really taste what difference it made. The taste of this was about four stars. I almost gave this three stars because I felt the recipe called for a lot of ingredients - not to mention, ingredients not typically used in curry but I felt that it is not the fault of recipe provider that I'm spoiled by another recipe that has less ingredients. The recipe I normally use packs a much more flavorful punch and this one left me feeling that it was good but needed something. Maybe lemon juice?
