Banana Pudding IV

I can't believe how great this recipe is! I followed the recipe using fat free cream cheese and lite whipped topping to reduce the calories. I couldn't taste the cream cheese (which is a good thing), but it provided an interesting texture and stability. I liked that it held shape after I served the first spoonful, so it didn't turn into runny mess. For those who said the pudding came out runny, it might be because you didn't whip it long enough (I whipped it in my blender for 2-3 minutes). If you like a good banana pudding, seriously, give this a try. It's almost as good after 5 days in the fridge as it was the first day. Don't be intimidated by the ingredients; it is quick to throw together and relatively mess-free!

Baked Apricot Chicken

I was worried this recipe would be too salty with the dressing and onion soup mix, but it turned out great! I served it over white rice, and my family seemed to really like it. I used Catalina french dressing to give it a little extra flavor. I like that I can throw it together in 5 minutes, then spend 45 minutes or so with my family before throwing together the rice and vegis (or, in other words, I don't spend an hour+ cooking on a weeknight). Great recipe!

Chocolate Mint Candies Cookies

My favorite holiday cookie! These tasted so great. I was a little leery of the batter when I pulled a rock of batter from my refrigerator, but it baked beautifully. I couldn't find Andes mints anywhere, so I sprinkled Andes chips on top for the same effect. I couldn't stop eating them!

Easy Lemon Cookies

These were pretty tasty and a welcome change of pace. I'm still working on the balance of lemon juice I prefer, but it's definitely a keeper when I need a simple, unusual cookie!

Caramel Filled Chocolate Cookies

Delicious! I omitted the walnuts because I don't care for them, and the recipe turned out great. You definitely need to keep the batter refrigerated or it becomes impossible to work with. I used a 1-inch cookie scoop, pressed a Rolo in the middle, then covered the bottom. It made the perfect size cookie and kept my hands (reasonably) clean.

Annie's Fruit Salsa and Cinnamon Chips

Amazing! And you can use whatever fruit combination you want for the salsa. My preference is apples, bananas, kiwi, and strawberries with a little grape jelly mixed in. The chips and salsa are always a huge hit!

Buttercream Icing

I have made this recipe as is and using all butter, as recommended by other users. I like it both ways; however, I prefer it with 3 cups of powdered sugar per batch rather than 4, otherwise it tends to get too sweet. If you are icing a cake, you will need to at LEAST double the recipe! My choice was 4 or 5 stars, and 5 stars is much more accurate than 4...I would probably rate this at 4.5+ stars.

A little complicated to keep together, but they were very well-received at holiday parties. the longer you can refrigerate the filling before dipping it in chocolate, the better it will hold together. VERY tasty!

Pretzel Turtles

Easy and amazing! Grid pretzels are best, but mini-pretzels will substitute in a pinch. I used the Dove caramels instead of Rolos because I prefer the taste/texture of Dove. Also, I followed the advice of several other reviewers and baked the pecan on top of the chocolate, then lightly pressed it down when I took the turtles from the oven. These were a HUGE hit at several holiday celebrations. These are too easy not to try at least once.

The Best Parmesan Chicken Bake

This is an interesting substitute for chicken parmesan. It tasted really good, though the croutons seemed to be alternately soggy or way too hard. My husband LOVED it. I will definitely make this again!

Delicious and EASY! Be sure pay close attention to the serving size of the ingredients; otherwise you will end up with a completely different taste/consistency (that I can only assume would taste terrible). I serve mine with cinnamon grahams or animal crackers.

Easy Chocolate Chip Cookie Dough Truffles

These tasted really good! My only complaint was in the texture, which was almost like eating raw cookie dough. Next time I might use a little less of the condensed milk to compensate. I will definitely make them again, particularly because the texture didn't really seem to bother anyone else.

Tangy Slow Cooker Pork Roast

I added extra spices, as recommended by several other reviewers. I was really nervous while it was cooking because the smell of onion was overwhelming (so much so that I was certain this meal was going to be terrible), but it tasted great! No overwhelming onion taste at all. My husband, who is terribly picky, said that this was a meal he could eat once a week! You can easily eat it as is, or add barbeque sauce. This will become a frequent meal in my house!

Mild Cheesy Chicken Enchiladas

Yummy but VERY cheesy! I substituted green onions for regular onions, and next time I will add a little spice to the filling because it was just a little bland. My hubby absolutely loved it and wouldn't change a thing. I served it with rice, which helped to dampen some of the cheesiness.

Country Apple Dumplings

I was skeptical when I saw Mountain Dew as part of the recipe. But WOW. This is absolutely AMAZING! The only thing I changed on the recipe was to add a little bit of cinnamon/sugar inside of the croissant before I rolled the apple inside. If you aren't sure about this recipe, please give it a try. You will love it!
