Banana Pudding IV
I can't believe how great this recipe is! I followed the recipe using fat free cream cheese and lite whipped topping to reduce the calories. I couldn't taste the cream cheese (which is a good thing), but it provided an interesting texture and stability. I liked that it held shape after I served the first spoonful, so it didn't turn into runny mess. For those who said the pudding came out runny, it might be because you didn't whip it long enough (I whipped it in my blender for 2-3 minutes). If you like a good banana pudding, seriously, give this a try. It's almost as good after 5 days in the fridge as it was the first day. Don't be intimidated by the ingredients; it is quick to throw together and relatively mess-free!

Baked Apricot Chicken
I was worried this recipe would be too salty with the dressing and onion soup mix, but it turned out great! I served it over white rice, and my family seemed to really like it. I used Catalina french dressing to give it a little extra flavor. I like that I can throw it together in 5 minutes, then spend 45 minutes or so with my family before throwing together the rice and vegis (or, in other words, I don't spend an hour+ cooking on a weeknight). Great recipe!

Chocolate Mint Candies Cookies
My favorite holiday cookie! These tasted so great. I was a little leery of the batter when I pulled a rock of batter from my refrigerator, but it baked beautifully. I couldn't find Andes mints anywhere, so I sprinkled Andes chips on top for the same effect. I couldn't stop eating them!
