Wine Jelly

Reviewed: Dec. 2, 2009
This is quick, easy and really good. I used bottled lemon juice because I am lazy and it was just fine. I used riesling and added birds eye chili to some jars, and dried lavender to others, and both additions were awesome!!! Just remember to turn the jars as the jelly sets if you add stuff so it's evenly suspended.

Peppermint Meringues

Reviewed: Dec. 12, 2009
This is a really nice recipe. For anyone who had trouble with beating the egg whites...egg whites, unlike whipping cream actually whip up better and more quickly when at room temp, so DON'T chill your bowl and beaters, and do let your eggs come to room temp before beating. I never remember to take eggs out ahead, so I just put them in a bowl of warm water for 5 minutes or so.

Boston Baked Beans

Reviewed: Apr. 12, 2010
This is a great baked bean recipe. Although it really bugs me when someone does a review with all kinds of modifications, I had to make one modification out of necessity...I substituted 1 tbsp Dijon mustard for the dry mustard as I had none. I also crisped the bacon first to get rid of some fat. They were delicious, even better the next day...this is the baked bean flavor I remember as a kid.

Garlic Chicken Fried Chicken

Reviewed: Jun. 6, 2011
Ok, you know what, this tasted good, but it just tasted like a good chicken finger to me. I do not claim to be a fried chicken afficionado but, meh...

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: Jun. 16, 2011
This was too sweet for me. I had to add more lemon juice at the end to balance out the honey. I also added pepper, ginger and lemon grass at the end to give more flavour. I cooked on high for 1 hour then switched to low for 3 and it could maybe have cooked a little less. I left out the olive oil altogether after reading other reviews and there was still plenty of fat in there.

for the record, piercing before cooking is ok, just don't pierce during cooking or before resting the meat!

Cottage Cheese Roast

Reviewed: Nov. 15, 2011
This was really really good!! I used rolled oats instead of cornflakes and reduced the oil to 2 Tbsp, used pistachios because it's what I had and it was really great. Did cook of an hour and it turned out perfectly. Next time I will try adding "meatloafy" seasoning like onion and garlic, steak spice and worchestershire sauce! Very Satisfying!

Red Velvet Pancakes

make your own creme fraiche easily...add 2 tbsp plain full fat yogurt to 1 C whipping cream (35%) in a mason jar. Cover loosly with a kitchen towel and let sit in a warm place (oven with pilot light is perfect or on top of the frige) for 24-48 hours or until nice and thick. Keeps in the frige for 2 weeks or so

J.P.'s Big Daddy Biscuits

These are even easier if you add an extra 1/4-1/2 C milk and then just drop them by heaping TBSP onto a baking sheet! No kneading, patting, rolling or cutting needed!

Grilled Bacon Jalapeno Wraps

Reviewed: Feb. 5, 2012
These are really good as written but there is way too much cream cheese. The second time I made them I made the following changes: 12 jalapenos halved, 3/4 package cream cheese, 2 tbsp salsa, and 1/4 C shredded cheese. Do not make the mistake I did of using thick cut bacon...it doesn't get crispy enough. I baked at 400 f for about 35 minutes. Really yummy!!
