Red, White, and Green Pizza

I used this recipe as a base. I liked the idea of ricotta/parm/spinach instead of Alfredo or a red sauce, but I knew ahead of time I would have to tweak the recipe for my liking. I used a homemade whole wheat crust that I rolled thin and pre-baked for 8-10 min, used fresh torn spinach instead of frozen, and added about 1/2 tsp of Italian seasoning to the ricotta mix. After smearing the mixture on the crust, I placed some grilled chicken, sliced green onions, mushrooms, and black olives. Topped with shredded mozzarella, then the sliced (Roma) tomatoes. When it came out of oven, I sprinkled a pinch each of oregano and crushed red pepper flakes. This might just be my new favorite pizza! I'm looking forward to trying the chopped artichoke next time as well!

Sauteed Radishes

Used coconut oil instead of butter. I've made these several times. My family loves them. I've even sautéed the radishes with halved brussel sprouts, and it was soooo yummy!!!

Amazing Lentils and Kale

I left out the cayenne, I felt it was plenty spicy enough from the medium salsa I used. My husband and son both like spicy, so I had them just add hot sauce to it at the table and they were pleased. Oh and I doubled the kale. Very good recipe! Served it with the vegan agave corn muffins on this site as well.

Pork, Pear and Walnut Salad

My family enjoyed this salad. I usually buy pre sliced tenderloins and this is a perfect recipe for them. I cook the tenderloin pieces in a little coconut oil, and sprinkle a little salt, pepper, and granulated garlic on them while cooking. I also add diced tomato and feta cheese to the salad and top it with the maple-balsamic vinaigrette on this site.

Buffalo Chicken Wing Sauce

My family loves wings, I've never really liked them because of the flavor. I thought I'd try this sauce after flouring and baking the pieces in a buttered baking pan. Boy was it good. Will be my official wing sauce from now on!!

Blueberry Crumb Coffeecake Loaf

I made these into muffins with a paper liner instead of a loaf. The topping of course went all over the pan, and my muffins looked a little strange, but they really were delicious. Great recipe using a store bought mix!

Vegan Agave Cornbread Muffins

Wow! So I expected these to be good, but I didn't realize they were going to be REALLY good!! I doubled recipe, used fresh made almond milk instead of soy, kept the agave at just 1/4 c. and used about 3 tbsp of coconut oil, melted, instead of canola. I can definitely see me making this recipe often!

Maple-Balsamic Vinaigrette

Very good. Used it on a chopped pork tenderloin, pear, and spinach salad. It was very sweet for my taste, so when I make it again, I will probably cut the maple syrup down a bit. I used a wisk instead of a processor and it turned out just fine. Thanks for the recipe!

Country Apple Dumplings

Mountain Dew™ Cake

Very good after a day in the fridge. I did use applesauce instead of oil in the cake mix. And I also added some Mtn Dew in with the pineapple and juice before adding cornstarch to give it somw extra Dew flavor. My family really liked this cake and so did I.

Exactly what I was wanting. Used fresh cooked corn cut off the cob (needed to use it up is why) and half and half instead of milk. Made 24 minis. Very yummy!

Baked Teriyaki Chicken

A very tasty teriyaki sauce. My husband, who dislikes anything teriyaki, (from a bad restaurant experience) raved about it. Doubling most of the ingredients and using 6 ckn breast halves, I cut the soy sauce down to 1/4 cup and substitued a 1/4 c. of teriyaki sauce. I also used 1/4 c. white and 1/2 c. brown sugar. I will def use this sauce for other meats as well.

Soft Christmas Cookies

After many years of failed attempts at sugar cookies, I believed that it was just not in the stars for me to be a sugar cookie maker, I would just buy store made dough and decorate every year. :( To my surprise, I tried this recipe thinking it would turn out like the rest, (too floury, bland, or just plain gross) but they didn't...they were perfect! I used 1 stick salted and 1 stick unsalted butter, 1 c. white sugar/1 c. powdered sugar and left everything else the same. And chilled in fridge overnight. I also used powdered sugar to roll instead of flour (I did NOT want floury cookies!) Baked in conv. oven at 400 for 8-9 min, cooled on baking sheet for appx 1 min then cooled rest of way on rack. Crisp edge yet soft cookie. My husband says he never wants store bought dough again! Thanks for the great recipe!!!

Chess Pie

Chess pie is my favorite pie ever. And growing up in the Tennessee back country hills, everyone's Granny makes them. I used this recipe, with 4 eggs but used the buttermilk and half brown/white sugars....Its a lil too eggy for me. I will make it with 3 eggs next time and see how I like it then. Overall very very close to good country chess(buttermilk) pie. :)

The best pie crust ever. Be sure to let crust rest 30 min in fridge before rolling out, and another 30 min in the fridge after you get it in the pans and before you fill. :)
