I am a full time housewife. I have an 8 year old son, a 16 year old step-son, and the greatest husband ever! I really enjoy cooking for my family and friends and they all seem to enjoy it equally as well. Sometimes I think they only come over for the food.
My favorite things to cook
I really like to put "twists" on clasic dishes. I'm not what I like to call a "fancy cook" by any means. I was raised country and that is exactly what I know and love to cook. Haven't had a complaint yet ya'll! ;-)

Turkey Pot Pie
Tasted great!! I actually used less butter than called for, used smoked turkey leftovers and added about 1 cup of frozen peas. The smoked turkey flavor in the pot pie was amazing!

Red, White, and Green Pizza
I used this recipe as a base. I liked the idea of ricotta/parm/spinach instead of Alfredo or a red sauce, but I knew ahead of time I would have to tweak the recipe for my liking. I used a homemade whole wheat crust that I rolled thin and pre-baked for 8-10 min, used fresh torn spinach instead of frozen, and added about 1/2 tsp of Italian seasoning to the ricotta mix. After smearing the mixture on the crust, I placed some grilled chicken, sliced green onions, mushrooms, and black olives. Topped with shredded mozzarella, then the sliced (Roma) tomatoes. When it came out of oven, I sprinkled a pinch each of oregano and crushed red pepper flakes. This might just be my new favorite pizza! I'm looking forward to trying the chopped artichoke next time as well!

Sauteed Radishes
Used coconut oil instead of butter. I've made these several times. My family loves them. I've even sautéed the radishes with halved brussel sprouts, and it was soooo yummy!!!
