Thai Green Curry Chicken

This is a great recipe which can be made with ingredients you can find in the Asian aisle of your supermarket. My personal tips: 1. ADD BASIL! Tastes awesome with fresh basil added; more like my favorite restaurant version. 2. Use 1 TB sugar, 2 was too sweet. 3. Add veggies, not just protein, for a full meal. 4. Mae Ploy is the best curry paste brand if you can find it.

Grandma's Homemade Banana Bread

Decent but way too sweet for me. I looked at some other recipes and some call fro only 3/4 cup sugar. I think that would be way better. Let the banana flavor be the star.

Buttermilk Pancakes II

Most recipes use veg oil instead of melted butter, and after making these I see why. Even after trying to let it cool down, when I added the butter to the milk it coagulated into hard pieces, so I then had to try to warm up the milk mixture... what a pain. These tasted fine, but my basic Betty Crocker pancake recipe is 10X easier. It doesn't require buttermilk OR melted butter.

Raspberry Pie I

The family gave this rave reviews. Really good recipe! I strongly feel you don't need to add ANY water if you just rinse the raspberries and then mix them with the other items. Am I the only one who had too much filling? I couldn't use it all. A recommendation: cook the pie on a cookie sheet lined with foil - if any pie filling comes out, you've saved yourself from a huge mess.

Extra Easy Hummus

This is so bland as is... maybe hummus just isn't the same without tahini, or maybe some lemon juice or pepper flakes would be enough to help it, I don't know. As is, it's like baby food - all you taste is mashed-up chickpeas, and guess what? Chickpeas don't have much flavor. Also, the amount of olive oil listed is not nearly enough.

Jazzed Up Couscous

I had some leftover plain couscous that was dry as a bone... looking for a way to reuse it that I could actually eat, I tried this - I used canned tomatoes since that's all I had, and added a can of mild green chilis. It was good. A huge step up from bone-dry leftovers.

Crispy Herb Baked Chicken

I thought this smelled & tasted quite good - my one complaint being that the skin on mine didn't crisp. However the boyfriend loved it & didn't think a thing should be changed. I see some people cook it at a slightly higher temp? That might improve the skin. Overall, a tasty recipe and a keeper.

Broiled Tilapia Parmesan

This is an easy and delicious way to prepare fish. The BF loves it. I've used Greek yogurt in place of some of the mayo and I think it's a bit lighter that way. Someone else said you can use sour cream instead of the mayo- that completely DOES NOT WORK! It turns out terrible.

Fantastic Lemon Butter Fillet

Such a simple recipe but really makes delicious fish. The lemon/butter/garlic flavor was so good. I skipped the lemon pepper and did not miss it. You could certainly change up this recipe in little ways for different fish or shrimp.

Italian Spaghetti Sauce with Meatballs

I found the sauce too salty and thin and the meatballs bland. Seemed the sauce needed less salt and the meatballs needed more! Or something to give them flavor!

Kathy's Delicious Whole Slow Cooker Chicken

This just didn't turn out great for me despite other good reviews. Some of the chicken was dry even though I used more liquid per other reviews. The flavor of the sauce is nice, but the chicken didn't taste that great.

Chicken and Corn Chili

It seems like other people really enjoy this, not sure why I'm different but it's basically cooking the chicken in a jar of salsa. It was just OK, not as good as other chicken chilis listed on this site.

Pink Sauce for Pasta (Shrimp)

I'm nor sure if this sauce is officially considered a curry or not, but the closest thing I can compare it to is a tomato-based version of green curry sauce. It has the same spicyness with a cream base. I will be keeping this recipe in my repertoire for when I want spicy Indian food - it's easy to make & you can have most of the ingredients on hand; just buy the shrimp, ginger & cream when you're ready to make it.

Portuguese Chicken I

This is fantastic - as noted in a previous review, you have to be sure to add the S&P although that was left out of the recipe. The sauce is SO good. I've eaten the dish with rice and it's good, mashed potatoes are even better. You could probably tweak this recipe into different versions by adding tarragon or another herb to the sauce too.

This is a really delicious recipe. I think using fresh herbs is key for good flavor. I added mushrooms, they work well in this! Good way to use up summer corn & tomatoes.

Cashew Avocado Chicken Salad

Really delicious and unusual mixture, the avocado helps keep the whole salad moist. You can definitely substitute a different type of nut - I used pecan slivers & they worked well.

Mapled Ham

This is a simple but very good way to make a holiday ham. My mother, who's been making hams for 30+ years, actually asked me for the recipe after I served this! I think that cooking it in water makes it a little more juicy than it would be otherwise.

Creamy Pesto Shrimp

This was very good - the pesto adds a really subtle & delicious garlic/basil flavor to the sauce. I will definitely make it again. If you like fettucine alfredo you will ove this recipe.
