Amazingly Easy Irish Soda Bread

My family loves this recipe! I've made it every other week for almost a year... by constant request. It does brown on the outside before cooking on the inside so be careful to coat with mixture or you can lower the heat and cook a little longer as suggested by one reviewer. I've made some variations to suit our tastes: I always use 1/2 cup sugar instead of 4Tbsp. That said our favorite variations are to make no changes but to add 1Tbsp Almond extract and 1/2 cup Crasins! We also do a Cinnimon and Rasins w/Vanilla extract, and I've done a very good rasins and cardamom. Love this MP Welty! Thank You!

Orange Oatmeal Raisin Bread

This recipe takes 3hrs, and makes 3 loaves! I should have read the 1 direction before starting. The Orange flavor is not very strong as directed, but this recipe has no sugar. Next time I'm going to add 1 cup of sugar... we like slightly sweet breads. It baked up nice following the directions. One tip I learned from reading other reviews on this site is to boil up some water and transfer it to a bowl, once raging. Put the "boiling water bowl" in the oven and then place your rising doughs in the oven and shut the door for the entire rising time. This makes the perfect "rising environment." Hope this helps someone.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

Excellent Cake! There is something to be said about the clarity and detail of these instructions... Thank You Submitter! I followed the directions exactly except I didn't remove the cake from the pan after cooling for 10min. I should have, they were stuck after 45min cooling at room temp. I damaged 1 during removal and the other I put back in the oven at 350 F for about 8 min and it came unstuck! Excellent trick to remember in the future! I thought the cakes was too thin to cut horizontally after I "trimmed to level," so I only had a 2 layer cake with a filling layer in between. It was difficult to frost because of the crumbs mixing into the frosting. I'm glad read 1 reviewers instruction on a Crumb Layer... it worked very well. I will absolutely make this cake again, but in slightly smaller pans or increase the ingredients by 1/2.

Lighter Banana Muffins

Great Muffins! I've made these about 4 times now, and they are a big hit in my house. I followed some of the suggestions here: 1/2 cup skim milk, top with brown sugar (sift and sprinkle or you'll get big dimples) and add 1 more Ripe banana. I've also added dried cranberries. I thought they were very good, and some just thought they were a good addition to "mix it up" a bit. All in all a new favorite in my house! Thank You Shelby M. and those who commented with improvements!

Pan-Seared Scallops with Pepper and Onions in Anchovy Oil

I followed the reviewer’s recommendations and reduced the oil to ¼ cup, but I also drained the Anchovies (fillet in olive oil and salt) into the skillet. So I ended up with a bit more than ¼ cup and a bit less than 1/3 cup. I browned the Scallops on both sides then removed them to a bowl and then put in the veggies. I was hesitant about the onions and the peppers going in at the same time since onions usually take longer to cook, but the oil really evened it out. We had lemon wedges in a servers bowl for those who liked it more lemony. Great recipe!

White-Hot Hot Chocolate

This is the best hot chocolate you'll find! It has Very strong flavors though. Next time I'll add a little more milk to dilute it. I used Ghirardelli White Chocolate for Baking. A must try! You'll love it.
