Amazingly Easy Irish Soda Bread
My family loves this recipe! I've made it every other week for almost a year... by constant request. It does brown on the outside before cooking on the inside so be careful to coat with mixture or you can lower the heat and cook a little longer as suggested by one reviewer. I've made some variations to suit our tastes: I always use 1/2 cup sugar instead of 4Tbsp. That said our favorite variations are to make no changes but to add 1Tbsp Almond extract and 1/2 cup Crasins! We also do a Cinnimon and Rasins w/Vanilla extract, and I've done a very good rasins and cardamom. Love this MP Welty! Thank You!

Lemon Cake with Lemon Filling and Lemon Butter Frosting
Excellent Cake! There is something to be said about the clarity and detail of these instructions... Thank You Submitter! I followed the directions exactly except I didn't remove the cake from the pan after cooling for 10min. I should have, they were stuck after 45min cooling at room temp. I damaged 1 during removal and the other I put back in the oven at 350 F for about 8 min and it came unstuck! Excellent trick to remember in the future! I thought the cakes was too thin to cut horizontally after I "trimmed to level," so I only had a 2 layer cake with a filling layer in between. It was difficult to frost because of the crumbs mixing into the frosting. I'm glad read 1 reviewers instruction on a Crumb Layer... it worked very well. I will absolutely make this cake again, but in slightly smaller pans or increase the ingredients by 1/2.

Lighter Banana Muffins
Great Muffins! I've made these about 4 times now, and they are a big hit in my house. I followed some of the suggestions here: 1/2 cup skim milk, top with brown sugar (sift and sprinkle or you'll get big dimples) and add 1 more Ripe banana. I've also added dried cranberries. I thought they were very good, and some just thought they were a good addition to "mix it up" a bit. All in all a new favorite in my house!
