Mouth-Watering Stuffed Mushrooms

I made these for a superbowl party at a house that was strictly vegetarian. These came out fantastic. I used indian curry and used more of it since we are all big spice fans and these were out of this world! I also made a triple batch and had some stuffing left over. The stuffing made a fantastic cheese spread!

Halibut with Zesty Peach Salsa

The salsa is absolutely fantastic! I trusted my gut instincts and all the prior reviews and made a double batch so that I would have more this week for over top chicken and tuna steaks. So glad that I did this! (I'm eating the salsa over grilled tuna steaks as I type!!). This is a fantastic condiment and super light prep. for the summer. I used a fish called amberjack instead of the halibut which is similar to mahi mahi and it was just super tender, flaky and flavorful. I am looking forward to seeing what else this is fantastic on!

Jamie's Cranberry Spinach Salad

This recipe is fantastic. I agree with cutting down on the sugar by at least half (I used 1/4 cup and it was more than fine) and I also used dried cherries. This is a very simple and tasty dressing. I will definitely be making this again several times this summer!

Cindy's Jambalaya

Really good and quite a nice spice to it. I like the spice so it wasn't too powerful. I also took some advice and put in the rice in the last 40 minutes and it mixed very very well. I also added garlic and doubled the bell pepper.

World's Best Lasagna

I made this for a work shindig and it received nothing less than rave reviews. I used all fresh herbs, the fennel does make a difference and it was hands down the best I have ever had. The sauce is also fantastic as a topping for spaghetti!

Double Tomato Bruschetta

Really really yummy. I also completely cheated and used hunts canned tomatoes that I drained. They turned out super yummy and quick. Only thing I may change is to brush some olive oil onto the bread before toasting it so that it doesn't scorch as mine did initially.... but that was probably since I wasn't paying close enough attention!

High Temperature Eye-of-Round Roast

This roast worked beautifully. I actually used top round since it was on sale when I went to purchase the meat. Reading others posts concerning gas ovens and realizing that my apartment oven probably won't work the same way, I did modify certain things. I used a 4 lb roast and seasoned it with kosher salt and pepper as well as some fresh ground dried rosemary. I used a meat thermometer because I didn't want to play a guessing game of sorts and set the thermometer to medium rare. I sprinkled all three spices generously and then put the into the oven after it had preheated for 30 min. I then cooked to the 7 min per pound and then turned the temp down to 220 (lowest my oven went...) and used the meat thermometer to tell me when to take out the oven. Let the roast rest for the recommended amount of time and this was hands down an amazing roast and I plan on using this technique over and over again. In fact, I went and bought a few more roasts on sale and froze them in order to make this meal again!

Chicken Pot Pie IX

This recipe turned out amazing! I made a few changes like adding two red potatoes cubed to the chicken mixture as well as adding mushrooms (about half a package of pre sliced) to the wet mixture and some fresh herbs (rosemary, thyme, and parsley) and some garlic. This was met with rave reviews!

Smokin' Scovilles Turkey Chili

Made this for Super Bowl and it went over amazingly!!! I made a double batch and it fit perfectly in a 6.75 qt French oven. Looking forward to making this many more times! It was also a great alternative to ground beef tacos!

Snow Ice Cream II

So much fun! Here in maryland we had 43" of snow last year at one time which was way more than we were used to! After a few days, the roommate and I made a journey and walked to the grocery store so we could make this! A lot of fun and great memories!

Venison Chili

I love this recipe as do many of my friends. So much so that I change the quantities to fit 25 servings from the normal 7. My dad is the hunter in the family and I stumbled across this recipe last year during football season after he had given me a large quantity of the meat. I use roast meat that I hand cut down into about 1/2" x 1/2" cubes. I made this for some friends, many of whom had never had venison or said they did not like venison and it was a showstopper. In fact, the promise of this chili being made again this week is what convinced several of my friends to help me move this last weekend! A couple of changes that I make are 1: increase the tomato paste and add some flour/water mixture to thicken it up; 2: use a cab/merlot wine; 3: increase the spices, not too much because I love that it is slightly sweet and then the heat kicks in; and 4: I use the juices/fat that I get from frying the venison in the bacon fat and add it back in instead of some of the chicken stock to put back in all that wonderful flavor. When making the 25 servings it really does take much longer to reduce the liquid down but the wait is well worth it. I haven't had any problem with the salt but I add very little *relying mostly on the bacon drippings* and make sure to use unsalted butter. A wonderful recipe even for those who say that they don't like venison!

Banana Banana Bread

This is absolutely fantastic! It does take a lot of bananas and I actually ran out so I used one of those applesauce cups unsweetened (4oz). I also added nutmeg as others recommended and I wish I had had cinnamon as well! Super yummy and incredibly moist. This makes a large loaf so it was more than enough to freeze half of it for another day! This is a great way to use some old bananas! :)

Mini Pineapple Upside-Down Cakes

These turned out amazing! So cute and they went very very quickly...I think I overfilled some of the cups because they were a little bit rounded but other than that, it was fantastic! (and that was my fault....)

Stuffed Peppers with Turkey and Vegetables

Super yummy and the stuffing makes a great topping over rice as well! I doubled the veggies and portabello mushrooms and added a little bit more spice to it but I loved them and they reheated very very well as leftovers.

Artichoke Spinach Lasagna

Made this and doubled the ricotta and added some additional noodles as well as adding portabello mushrooms. super yummy and the lasagna did end up being much taller. Quite enjoyed this lasagna.

Garlic Mashed Red Potatoes

Super yummy and I did add basil as recommended by others and I really love the garlic flavor that the boiling of the garlic with the potatoes imparts. I used my potato ricer because I really like creamy smooth potatoes. I left part of the skins on but not all of them. They turned out fantastic!

Venison Stew I

Quite a good meal! I actually made this in double because I had four pounds of venison that I had defrosted (between a roast and a back strap). I actually didn't use the veg. oil, but rather cooked the venison in bacon fat (used an entire package for the double batch) and then also added 1 lb of celery and 2 packages of mushrooms. In addition, i used very little water, instead i used beef stock, and i also used prior reviewer's recommendations to use brown gravy mix instead of flour. I also added a few more spices (such as rosemary, basil, etc,) and used salt and pepper to taste. I have a great amount left for me and the roommate as well as some portions for family members. This is a great alternative to the chili I usually make. Great meal that everyone has raved about!

Baked Asparagus with Balsamic Butter Sauce
