Tiramisu Cheesecake

Outstanding! Served this New Year's Eve 2012-3 and was a hit! I took suggestion made by another and doubled the Kahlua. Next time will go 3x recipe as it was so smooth and creamy and not overpowering, it needs more. Crust was a bit dry so will ensure more moisture there as well, butter & Kahlua should do it. Package of Lady Fingers I bought was 14 oz. and I used it all which is part of the reason for dryness. I did compensate this time w/extra T of butter and Kahlua but needed a bit more. I also used 1/3 less fat cream cheese which worked fine.

Bubba's Jambalaya

Excellent! I used Kiebasa, raw shrimp and chicken, not having any ham around. I put the vegies in with bacon about half way through cooking and left the bacon in throughout. Worked great and will do so again. Preferred cajun seasoning is now the Louisiana Crab & Shrimp Boil! Wow! A couple tablespoons really snapped it up. No need for Andoulli sausage then. Will definitely make this again!

Sausage and Apple Breakfast Casserole

Made this for 2012 Christmas morning and everyone liked it. Nice change from breakfast sausage casserole (croutons, mushroom soup, etc) and easy to make. I used English Muffin Toast bread cut into cubes which had more body than bread since I didn't have french bread. Worked great! Some liked it plain, or with maple syrup as suggested. Will make it again but will add in sauted onions for a bit more flavor.

Spicy Thai Steak and Vegetable Stir Fry

Excellent! Used Louisana Cajun Shrimp Boil as seasoning vs. regular Cajun, holy cow - nice kick! Also used Rice Noodles and there was enough liquid left in the vegies and meat to coat them but next time, I would season the noodles with a bit of ginger in the pot when cooking. I didn't have bean sprouts or green onions so I used a can of fancy Chinese vegatables which worked out great! Will definitely make this again!

Original Chex® Party Mix

My grandmother's recipe is almost identical with two important changes! Add 1-2T of Frank's Red Hot sauce (Grandma put in 1 T Tabasco but that seems too extreme) to the mixture while melting butter. Also 1 teas. celery salt. Don't forget to add Cheerios, equal portions as the Chex Product! Everyone who has tried my recipe says it is the best ever!

Grilled Portobello Mushrooms

Excellent! Used sliced large caps and tossed with sliced red peppers before putting on a stainless steel grilling pan. Continued brushing occasionally as they roasted over low/med heat while the steaks grilled next to them! This would work well for baby port's or as the recipe calls for - whole large ones. Next time will try adding green, yellow or orange peppers and maybe onions or aspargus!

River Omelets

Just what the doctor ordered! Was looking for a quick breakfast dish that didn't require overnight prep! I used recipe proportions but took the advice of several reviewers and saute'd the veggies and threw in brocolli, cauliflower, red & green peppers and a layer of spinach near the bottom! Used a Mexican blend cheese (co-jack, cheddar, asiago) and baked for 50 minutes covered. It should have come out at 45 but still moist and firm. Definitely on my "make again" list!

Southwestern Turkey Soup

Excellent! Followed the recipe but took several suggestions and added the corn and black beans. I didn't have an avocado but put sour cream on top along with cheese and it was great. Used spicey mexican corn and black beans which made it a bit snappy so we toned it down with elbow macaroni! This is on the 'make again' list for sure!

Chunky Potato Soup

Excellent soup, just what the doctor ordered when my wife was feeling under the weather! Followed the recipe except no celery on hand so used a good amount of celery salt, added dried basil and chives for flavor along with diced ham. Nice creamy texture! As a few reviews suggested using cheddar and not having swiss, I used Co-Jack which worked very well. Ham used was sandwich ham, this will be great for leftover Easter or Christmas ham! Might add bacon next time as well.

Grill Master Chicken Wings

This has become the "only way" to make wings at our house! Very tasty! I prebake (@375) my wings after marinading to cook off some of the fat (about 20-25 minutes, turning half way through) before grilling. I've made the buffalo sauce to recipe as well as adding a 1/2 tsp. of garlic powder. We have also used this for barbeque wings or any other sauce. Thank you for sharing this recipe!

Kathy's Roast and Vegetables

Very juicy, flavorful and tender way to cook this lean cut of roast! I followed the recipe except I substituted a can of french onion soup as I didn't have dry soup mix on hand. The juice was a bit thin as a result but tasted great when spooned over the meat and veggies! I'll be shopping for another good buy on bottom round soon!

Guacamole

We've made many batches of Guacamole and I think this is the best! Only thing I would change is to chop the Cilantro a little finer and maybe mash the tomatoes before adding to avacado. Excellent!

Cheddar Hash Brown Omelet

I was looking for a fast, easy egg dish and found this to be just the ticket! I sauted the veggies slightly and added a thick layer of frozen hash browns, then browned them slightly. Rather than folding into an omelet, I cooked it through by covering on low heat (like an oven baked dish). Not having any green peppers, I used frozen broccoli, ham, onion and pepper jack cheese. Worked great!

Nanny's Spaghetti Sauce

Excellent! I followed the recipe to a "T" with a few additions. As another reviewer suggested, I sauted onion, green pepper and a few mushrooms in the pan before adding tomatoes. We found the sauce a little sweet and put a few cranks worth on the sea salt grinder and a dab of dried basil flakes. Overall, the right combination of sauce and paste made for a thicker, saucier texture and the flavors were magnificent! Definitely will do it again very soon!

Alaska Salmon Bake with Pecan Crunch Coating

Excellent, easy to prepare with ingredients I had on hand! The honey-dijon combination with pecans was great. I used Italian bread crumbs which I would do again. Cook time would have been right if I factored it up for fillets that were about 1-1/4" thick. We fish salmon in the summer and are always looking for new ways. This one will be remembered and tried again and again.

Phyllo Turnovers with Shrimp and Ricotta Filling

I made it per the recipe and it was excellent. I would like to experiment though, and add about 1/2 tsp of garlic powder to the butter to saute with vegies. We also thought of putting some Boursin cheese. I may try using three sheets of Phyllo just to compare. We are serving it again for Christmas Eve ahead of the Prime Rib!

Turkey Wild Rice Soup

We had already cooked the rice for stuffing and boiled the bones after eating Thanksgiving dinner for soup, adding celery & carrots to it as we did. The soup lacked flavor so I went searching. Great idea to add bacon, half & half and butter. I melted the butter in same pan as bacon was cooked, added flour, cream, salt & pepper and thickened it, then and added to soup stock along with rice. Excellent!
