Apple Crisp II

This is a great and easy recipe! It impressed my company and made the house smell heavenly. The only thing i would changed in the recipe is to have cut the apples a little thicker for a more chunky texture.

Slow Cooker Mediterranean Stew

I thought it definitely needed salt, and would have preferred more spices. In general, it was good, but I probably wouldn't make it again. It is really easy, though!

Marrakesh Vegetable Curry

We loved this recipe. I added more spices, as we prefer things really spicy, but the basic recipe was easy and delicious. It really impresses guests, and makes the house smell wonderful. I also used a white potato instead of sweet, and left out the raisins.

Tofu Parmigiana

I really enjoyed this recipe, and would make it again soon! I had trouble getting the breading to stick to the tofu, though, and in the future will use either a little milk or egg to help it stick. Also, I'll use a little more sauce next time. But a great recipe overall, for vegetarians and non-vegetarians alike!

Hearty Vegetable Lasagna

This lasagna was delicious! I am not usually impressed with vegetable lasagna, but this recipe had a great taste. I left out the mushrooms, and reduced the amount of mozzarella because of cholesterol consciousness, and still the recipe was fantastic. This recipe is just as tasty made in advance and baked for 1/2 the time and refrigerated for up to 3 hours; then cook the other 1/2 time just before you serve it. I tried this so I could spend time with my company instead of being tied to the kitchen, and it worked well.

Rae's Vegetarian Chili

I was disappointed in this recipe. Maybe my expectations were too high, after all those rave reviews!! :-) If I made it again, I would leave out the cumin, which had a much stronger taste than I expected, and make it more spicy. It was, however, extremely pleasing to the eye, with all those colorful beans. I served it over rice with bread.

Easy Cheesy Potatoes

This is such an easy recipe, and a great grilling alternative! Try it instead of mashed potatoes with your steak, and if you're trying to go low-fat, substitute a yogurt based spread and skim cheese. Still very flavorful with the salt/pepper and onions. Very quick, and cooks just as advertised in the time allotted - perfectly tender potatoes!

Cavatappi with Spinach, Garbanzo Beans, and Feta

This was a great recipe for those who don't want just the same old thing. My only complaint is that I felt that the chickpeas were too plentiful, although I liked their flavor. Next time I may add some broccoli in place of the chickpeas. I also used frozen spinach with no problems. This recipe is definitely a keeper in my house!

Baked Vegetables I

This recipe is a favorite! I took the advice of a previous reviewer and mixed the vegetables with the onion soup mix and olive oil before adding the vegetables to a 9x13 inch pan. I also added the potatoes 15 minutes prior to the other vegetables, and I should've put the carrots in 5 or 10 min. before the other vegetables as well, as they were still rather hard. I think this recipe is based very much on the onion soup mix-if yours is salty, don't add any extra salt!! Otherwise, it's perfect, and such easy prep!

Veggie Ranch Pizza

Surprisingly good! I wasn't sure what to expect with this recipe, but I was extremely pleased with the result and my guests loved it! I ended up cutting a little of the ranch dressing out, as it seemed to call for a large amount. It has an interesting mix of flavors, and cooks to perfection. I'd definitely make it again.

Pesto Pizza

Excellent recipe! Unique combination of ingredients make this a flavorful and impressive pizza... but so easy and quick to make. Use it to wow friends and family! A pizza stone will greatly enhance the texture of the crust. This recipe will be a staple in our house!

Caramelized French Toast

Well, make sure your water added to the melted brown sugar is PIPING hot... mine wasn't and it hardened the brown sugar on contact. No matter how much I heated it after that, I never got a good caramelizing mixture. I'm disappointed, and probably won't try it again.

Really easy and so fudgy! I loved them, and will make them many more times in the future! The only complaint I had is that my frosting did not spread as easily as I would have liked... but the taste makes up for it!

Classic Minestrone

This was the first really good soup I've made thus far! I liked the flavor, but next time would prefer it a bit spicier. I added slightly more noodles than called for, and would recommend NOT doing that, as it made it much too thick, especially after refrigeration. I did make it a day in advance, and it kept well for a week until we ate it all! Thanks!

Asparagus with Parmesan Crust

This recipe is a great addition to any risotto. I served it as a side dish with the Mozzarella and Sun-dried Tomato Risotto recipe from this site. It was a hit! Next time I'll use an olive-oil based cooking spray instead of the olive oil for a lighter taste. Also, try using bigger asparagus spears, or cut down on the cooking time for baby spears. My baby spears were overdone at 12 minutes in the oven.

Risotto with Sun-Dried Tomatoes and Mozzarella

This risotto was delicious! It came out creamy and tender after cooking for about 30 minutes. Well worth the time, and the recipe is fairly easy. Be sure the rice doesn't stick by giving it a stir every now and then. I found that the rice became tender more quickly if I covered the pan after ladling in the broth. The sundried tomatoes with basil were very tasty! Make this risotto with the Asparagus with Parmesan Crust recipe on this site-it was wonderful!
