Vegan Brownies

Made these last night after searching the web for a vegan recipe. My daughter had to make a vegan recipe for her AP Environmental class as a lab assignment. After reading some other reviews we decided to use 1/2 cup of oil and a 1/2 cup unsweetened natural applesauce. Kept everything else the same and baked for 30 minutes. I cut into them this morning and all I can say is YUM! I wasn't too sure what to expect from brownies with no eggs but holy cow are these great! Good thing she's taking them to school or I'd probably eat the whole pan! They were not at all crumbly and very moist. Great recipe! Thanks!

Fabulous Wet Burritos

I made these the other night and they were fabulous! The whole family thought so too and for that alone this recipe gets 5 stars. I made as directed but I ended up with 9 burritos instead of 6. I must not have put the full amount into the tortilla, but honestly it couldn't hold much more and still close. I will definately be making these again! Thanks Sydney6!

Ninety Minute Cinnamon Rolls

Very easy dough to work with. We live at high altitude so it didn't take as much flour to get a smooth dough. Only about 2 3/4 cups plus flour for dusting the work surface. Baked in a 9 x 13 dish.

Buttery Lemon Spinach

I thought this spinach recipe rocked! The only thing I did differently was cutting the butter down to 2 Tbsp. and used 1 Tbsp. dried minced garlic. The first time I made it, it seemed too buttery. I melted the butter, added the lemon juice and garlic and let it sit for about 15 minutes until the garlic reconstituted itself. Put the spinach in a Tupperware microwave cooker, poured the liquid on, covered it and pushed the fresh vegetable button on the microwave. Voila! Easy and oh so good! Thanks for sharing the recipe.

Apricot Leather

This recipe was very simple to put together and tastes wonderful! The only reason it received 4 out of 5 stars was because after 8 hours in the oven, I had to put it in my dehydrator to finish up. The lowest my oven goes is 170 degrees. I started it, set the timer for 6 hours and walked away. Apparantly because my oven is one of the newer models, it turns off the heating element when the door is open. The fact that when I followed the recipe and stuck a spoon in the door to keep it open, it turned off the heating element and didn't bake the leather :( A note to all who might have a newer model oven, check the users manual to see if it turns off the heating element when the door is open. If that's the case and you dont have a dehydrator as a backup, this might not be the right recipe for you. For everyone else, this is a great recipe. My kids loved every bite and I felt good about giving them something healthy without all of the additives most "fruit snacks" contain. Thank you for a great recipe!
