Stuffed Pepperoncini

Made this for a birthday party and they were a gig hit. They were the center piece on a tray of antipasta skewers. Used half cream cheese and half garlic and herb boursin cheese for more flavor. Be sure to make these ahead of time and let sit in the fridge. Overnight is ideal for great flavor.

Easy Pepperoni Bread

I made this version and it came out okay, just needs a little moisture in the filling. I also made a version using chopped spinach sauted with olive oil and garlic, feta cheese, mozzerella cheese and chicken breasts that were marinated with pesto and grilled. That version was amazing! Very moist and yummy. Took both breads out on a fishing trip and served with marinara sauce that was heated and kept in a thermos. That was some good fishing lunch!

Tiger Butter II

This was really good. Made it for the first time this year for the Christmas "goodie" bag that I give all the kids. Fast, easy. I highly recommend using the microwave on this as other reviewers have mentioned. Added the 1 tbs of shortening to the chocolate. Crunchy peanut butter is a must! Melts in your mouth!

Baked Potato Casserole

Made this dish for Christmas dinner at my son-in-law's house. Incredible! Addded a bit more chives and made a little bit more sour cream and mayonnaise misture to make sure it was moist. Par boiled the potatoes for 10 minutes and then drained. Sauted the onions in a little butter to make them soft. Only used about half of the sharp cheese in the dish and added the rest on top the last 15 minutes of baking. This was so good!
