Ken's Kickin' Posole

This stuff is great. I had never eaten posole before so didn't know what to expect. Except for it being a little too salty for me, it was really good. I used turkey bacon rather than regular bacon and fried it in olive oil to make it a little more heart-friendly. A bit of sour cream on top really makes a huge difference--fantastic. Will definetly make again.

Quinoa Salad with Dried Fruit and Nuts

This is fantastic stuff! I omitted the vegetable oil and used unfiltered, natural apple cider vinegar instead of white vinegar. I wasn't too sure of it the first time I tried it, but after it sat in the fridge a day or two and the flavors blended, it was really, really good! You might want to back off on the onions. The longer they sat, the stronger they became.

Whole Grain Healthy Banana Bread

I wasn't expecting much, but this was very, very good! Just wish I had added nuts--just because I like 'em. UPDATE: I've started making this with walnuts, and it's so wonderful that I find myself making this all the time. I'm almost never without this bread and never get tired of it.

DASH Diet Mexican Bake

I didn't drain the tomatoes either and also had a lot of water in the bottom of the pan. Once I drained that off, it was very good--especially the second day. I used boneless, skinless chicken tenders and left them whole. Used canned corn instead of frozen. The only ingredient I didn't have was the poblano pepper, but it was still very tasty--especially for being a "diet" dish. It was not lacking in flavor for me. I will definitely make this one again!
