Slow Cooker Buffalo Chicken Sandwiches

So good! The cold leftovers were fabulous on my salad the next day. I made it again and stirred in 1/4 c. blue cheese dressing and 1 c. reduced fat sour cream. It was a great dip!

Tasty the way it is listed; really tasty with a few cloves of garlic, 1/4 c. dry red wine, and real mushrooms instead of a can. I love how easy this recipe is!

Butternut Squash Soup

delicious! I did make some changes: 1. roast the squash with 4 cloves of garlic and a drizzle of olive oil at 350 for an hour 2. cut the margarine to 2 tbsp 3. you really only need 1 package of cream cheese and use the 1/3 fat version I had never used a butternut squash before.

Shrimp Linguine Alfredo

absolutely delicious! I used 7 cloves of garlic and red pepper flakes for some zing. I also added a package of mushrooms to the butter after removing the shrimp. Stir the parmesan into the sauce slowly a couple minutes before serving.

Sweet and Spicy Stir Fry with Chicken and Broccoli

So good!! I omitted the broccoli and green onion because I didn't have any and made it with a green pepper and a white onion. One packet splenda instead of hoisin, and at least 5 tbsps chile paste.

Fettuccini with Mushroom, Ham and Rose Sauce

YUM! And so easy! Use 2 tbsp butter and a splash of red wine to cut the fat and add a little tang. I also used 1 c. fat free sour cream mixed with 1 c. cream. This is a keeper! I will definitely be making this again!

This was good but really heavy. I tried it again without the cream, adding garlic, fresh tomatoes, and doubling the mushrooms. I also added a splash of white wine. Much better!
