Zippy Chicken Corn Chowder

So delicious! The whole family loved it and I'll make it over and over again. I'm not a real paprika fan, so substitued a tsp or so of cumin - highly recommend that! I had a few jalepenos that had to be used up and they tasted good in there, too. Enjoy!

We rolled up this dish in a tortilla with lots of cheese and a little refried beans. It was topped with a green chili sauce....quite good!

Smiley Salad

Thanks for the idea! My daughter wanted to make the salad last night and this was just right. I set out the ingredients for her and she made a little face for each member of the family. She made crouton eyes, bacon mouths, tomato noses and cheesy hair, each on a big piece of lettuce. We found it didn't need any dressing, and most members of our family rolled the little face right up into the lettuce and ate it as a salad roll-up. A big hit!

Pumpkin Chocolate Chip Muffins

Yum! And thanks to the reviewers who suggested to add a little oatmeal in place of some flour and to use extra pumpkin in place of the applesauce. Delicious! I also cut back on the sugar.

Hot Chocolate

Wonderful! Instead of mixing the egg into the chocolate mixture, it works well to mix just a little of the warm chocolate mixture in with the egg. Whisk well, slowly adding more and more hot chocolate with the egg. Then when you add the egg mixture to the hot chocolate it won't be lumpy. We made it on the stove top and it worked great. It's nice to have an after school snack with some extra protein. Thanks, Steph!

Old Fashioned Coconut Cream Pie

It's a fine tasting pie, but after all the reviews I was expecting a heavenly dessert. It tastes like coconut milk and whipping cream. Still yummy, but not as fantastic as everyone is saying.

Huckleberry Muffins

These muffins can easily become healthier. I reduced the sugar by 1/4 cup and made one cup of the flour to be whole wheat. It still tasted great! The next time I make these I'll reduce the butter - it's on the greasy side. But I will make them again! Yum. Happy huckleberry picking!

Lots O'Veggies Sausage Spaghetti Sauce

Raspberry Custard Kuchen

Wow! This is REALLY good! We had it warm, with a little vanilla ice cream on top. Perfect for our rainy day! I cut in half the sugar suggested for the topping, and it was plenty sweet enough. I used a frozen bag of mixed berries, thawed, and it turned out great. Thanks! It's a keeper!

Maple Crunch Cream Pie

This pie is so so so delicious! I only used half of the maple cream filling in my pie and the subtle maple flavour was perfect. I'll use the other half tonight when I make another one. Thanks for such a great recipe - it'll be part of our Thanksgivings and Christmases and Summer birthdays.

Pizza Without the Red Sauce

My family has been enjoying homemade pizza every Saturday night for years. When I added this one to the tradition, even the 14 year old sceptic liked it! Now this pizza is a regular hit. My friend uses the sauce (the first 7 ingredients)on baked perogies and to make garlic bread. Delicious! Highly recommended!
