Day-After-Thanksgiving Turkey Carcass Soup

This was wonderful! I think many times turkey soup can be somewhat boring, but not this one. After reading the other reviewer comments, I put about 1-1/3 cups of rice in. It was more than plenty. As the soup sits the rice just keeps absorbing the liquid. I may cut back to 1 cup next time. The flavors were terrific and I liked the "stew" consistency. I will definitely make this again. Perfect for cold winter days!

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

I tried this for taco filling last night and it was wonderfull! My husband loved it. I added red pepper flakes to make it a little more spicy. This will be my "go to" recipe when I want to make tacos. I know it would make a great taco salad too!

Fruit Dip VI

This fruit dip is wonderful! So easy to make and once it is left to chill in the frig for a while, the flavors really come together. I made this for a potluck and used a large round plate and set big beautiful whole strawberries on the plate and put the dip in a clear bowl in the center. It looked like a big strawberry wreath. Beautiful and oh so tasty!

Spanish Rice II

I made this last night and I have to say I was disappointed. In my opinion, it doesn't have much flavor and definitely needs more spices. I don't think I'll make this one again.

Irish Soda Bread

Excellent recipe! Loved the bread. Brought it to friends and they said it was the best they had ever tasted. I agree. Very easy to put together no mixer needed. Dough was very sticky, but kneading it in the bowl was easy. The finished loaf was beautiful. Needed almost the full 75 minutes to bake. I didn't have enough raisins so put half raisins and half currents. Loved the result. Perfect!
