Raspberry Lemon Muffins

I made these with very finely chopped fresh strawberries and they were delicious! I think these are our new favorite muffins in our household. I did use half whole-wheat and half regular all-purpose flour to make them a touch healthier. I also followed some others' suggestion and used 3 tablespoons freshly squeezed lemon juice. It provided just enough zip. Thanks for the great recipe!

Old Fashioned Strawberry Pie

I thought this pie was absolutely wonderful, as did everyone who tried it. I wanted a pie akin to a traditional apple pie, but with strawberries and this hit the spot. Minor changes: I used 1 cup sugar with fresh, in-season berries, 1/4 tsp cinnamon, and added 2 tablespoons cornstarch for a firmer consistency. Delicious!

Thai Peanut Chicken

I thought this was wonderful, as did my husband and 17 year-old stepson. I did make several changes, on the suggestions of others and based on personal preference. I doubled the sauce and next time I will probably triple it. I strongly recommend not skipping or lessening the fresh ginger as I believe it adds to the complexity of this dish very nicely. I used 4-5 fresh cayenne peppers in place of the powdered variety. I also skipped the green onion all together as I don't care for their consistency and find they generally add little flavor. I was worried the peanut butter would be overwhelming but I thought it was just the perfect amount (I doubled it as mentioned earlier, along with the other wet ingredients). Lastly, I lessened the garlic to 2 tbsp. With these changes, I give this one a five. It was delicious.

Beef and Tomato Pie

This is a fast, easy recipe to have on hand. I did make some changes according to personal preference: I used ground turkey, half of an onion (we do not care for a strong onion flavor), 3 minced garlic cloves, 1 tbsp taco seasoning, 1/3 cup medium salsa, and I used a frozen pie crust rather than the biscuit mix and mozarella cheese rather than cheddar. The taco seasoning and salsa gives the dish more flavor but keeping the amounts small keeps it from going Tex Mex on you. I guess I made a whole new dish, but this recipe was where it started!

Butternut Squash Soup

I made a few minor changes to this recipe and have made it for several occasions. Everyone always wants the recipe. I cut my squash into halves, drizzled with olive oil, and roasted on 375 for 40 minutes before moving on with the recipe. I used 4 cups chicken broth in place of the water/bouillon, a combination of cumin and oregano in place of the marjoram, and only 1 8oz block of reduced fat cream cheese. This soup is hearty enough to be served with some good chunky bread as a meal all on its own.
