Delicious and easily made more healthy. I make this any time I have bananas about to go bad and freeze loafs for future breakfasts. My family actually likes the more nutritious version better than the original! Instead of all purpose flour, I use 2 cups of wheat flour and instead of 2 eggs, I use 3 egg whites. I also substitute brown sugar for 1/3 cup agave nectar, 1/3 cup maple syrup, 1/3 honey. I also add 1 cup of apple sauce, 1 cup chopped walnuts, 2 tbsp cinnamon, 2 tbsp of vanilla, 1 tbsp ground ginger, 1 tbsp allspice and 1 tbsp nutmeg. It's sweet but has an edge to it. Yum!
