Mom's Squash Casserole

Reviewed: Mar. 19, 2011
A WINNER! I love squash casserole & have been looking for a great recipe for years. It’s hard to find decent recipe without sour cream (as I’m not a big fan). I have tried similar recipes without the egg. THE EGG MAKES THE DIFFERENCE! It adds great texture to the casserole! My changes include: adding ½ cup grated carrot for color, stewing the squash, carrots, & onion in butter and chicken broth, adding 3-4 dashes of pepper sauce and garlic powder to the mix for depth of flavor, and using bread crumbs dotted with butter on top instead of croutons. SUPER DUPER YUMMY! Try it!

Good Old Fashioned Pancakes

Really good as is! I did ad 1/4 C more milk because I like a thinner pancake. Still really fluffy and delicious!

Butter Snow Flakes

Wonderful! The house smelled of oranges after making these!! My changes - used 1 teaspoon of pumpkin pie spice (as I ran out of cinnamon making other cookies) & the zest of an entire orange as others had suggested. Yum Yum! You gotta make these!

Pea Salad

This recipe reminds me of childhood. I usually get the urge to make it in the early spring. I don't use the mustard and I use cubed chunks of sharp cheddar cheese instead of shredded cheese (I also use a bit more). Yum!

Broccoli Cheese Soup V

Reviewed: Nov. 6, 2008
Really Yummy!! I used fresh broccoli (peeled and diced the stalk and kept the florets small). I also added a can of cream of chicken soup after the milk. It was creammy and thick and cheesy! It will be a staple in our house!

Creamy Chicken Rice and Veggie Bake

Reviewed: Aug. 2, 2008
This has potential. agree with others - needs a lot more liquid. Maybe prepare rice as directed before assembling recipe?!? Also it doesn't mention veggies or the amount to add. I added sliced yellow squash, zucchini, diced onion (saute before). I also used boneless, skinless chicken breasts instead of thighs. Once I compensated with water, it was better! I'll try again preparing rice ahead.

No Bake Cookies IV

Reviewed: Aug. 2, 2008
these were ok, more like candy than a cookie. The flavor was good, but as someone else said "something is missing" I had to roll them into balls for them to stick together. I'll keep searching

Marinated Cheese

Reviewed: May 4, 2008
Big Hit! had this at a friends party - soo- yummy! The key is to freeze the cream cheese before slicing(If that doesn't work for you, I think it would be nice with mozzarella or provolone in it's place)

Tortilla Rollups IV

Reviewed: Jan. 12, 2008
Served these at my child’s party and the adults went crazy! Only had 2 slices left! My changes were: 2 blocks Neufchatel/cream cheese (no sour cream), increased cheddar to 2 cups added 1 can sliced black olive. The key: refrigerate OVER NIGHT before slicing and texture will be perfect! Yum Yum!!! Everyone wanted the recipe!!!

Cake Mix Cookies III

Reviewed: Nov. 10, 2007
It’s a great recipe with adjustments!! Otherwise it wouldn’t have received 5 stars. I took the advice and added 1Tbsp of water to the recipe. It was still crumbly (dough pulling away from the chips) and when baked grainy in texture-ugh! I added more water and reworked the dough. Then the cookie had more of a cookie dough consistency and baked nicely. The cookies spread and had a much better chewy texture!!! I really liked the adjusted cookie recipe. The combinations are endless Here are my changes/recommendations: Devil’s food cake mix (with pudding in the mix), white chocolate chips, 3 Tbsp water, baked at 350 for 10 minutes(not 7)

Easy Chocolate Cookies

Yummy Recipe and sooo- simple! The cookies are chewy like a brownies. They do stick to the pan even with greasing it. However, they're worth it. Next time I'll use parchment paper to see if that helps.

Brownie Mix in a Jar II

Reviewed: Feb. 11, 2004
I gave these as gifts at christmas. They were a big hit! Great flavor but, I didn't like the look of the layers-even after wiping the jar between layers-it still looked messy. I took the handle of a wooden spoon and pushed it down between the jar and the layers. It looked more festive-like sand art. I will make again.

Shrimp Chowder

Too thick, too bland! It needs some seafood stock or something-not a lot of shrimp flavor! I'm NOT impressed. I will continue my search for a yummy shrimp chowder!

This is absolutely wonderful!!! everybody loved it!!! It was the best salmon we've ever had(eating out or in). I substituted olive oil for the butter and used reduced sodium soy sauce for the soy. I will make it a staple in our house!!!
